Pork Chops Stuffed with Smoked Gouda and Bacon
Paint me yellow and call me a cab!!! This is exceptional. I did change and add somethings. Including sauteing diced onion and garlic w/ ground fresh Rosemary to stuff the chop as well as the smoked Gouda, Parsley and bacon. I used wet tooth picks to hold the opening closed. Then I added more of the onion and garlic, smoked Gouda, Rosemary, bacon and some cornstarch thickened chicken broth and white wine broth that was in the pan w/ the chops. Put a section of Rosemary on top, poured gravy over it and served it to my elderly folks (95 and 89).

Butter-Roasted Cauliflower
The video is like a silent movie in color...w/ subtitles. Must be early Chef John...whom I love. I find it lacks seasoning as written. For those Olive oil users, the point of the recipe is to use butter, not the traditional vegetable roasting OLIVE oil. Personally I do add some Olive oil. I also use any seasonings I want. Certainly needs any form of garlic, onion powder is good...what do you like? I might add some Poblano's in there to roast as well. I made what I call "Cruciferousfest" for a small live music picnic type party: Cauliflower, Broccoli, Brussels Sprouts, Daikon Radish and Bok Choy (all cruciferous). Drizzled it w/ reduced Balsamic Vinegar. Went over leftovers to take home.

Patti's Mussels a la Mariniere
Excellent dish...I must say. I used frozen Mussel Meat from Asian Market...apparently it's not Mussel season in August. Pick your pasta. Turns out exceptional...though I used a little cornstarch to thicken up the thin sauce.
