Kate's Black-Eyed Pea Salad

Delicious salad, but I leave the celery out due to my personal preference. But everyone I have served it to really likes it. I have also substituted the sugar with splenda and it was good as well. Thanks Kate!

Beefy Baked Ravioli

This recipe is so EASY! I follow directions exactly except I add 3/4 can of water to the meat sauce to help cook the raviolis. I also refridgerate overnight so the liquid can get into the frozen ravioli. Everyone raves about this. I also only use mozzarella and parmesan cheese - never used the monterey jack because I don't normally have it on hand. But a delicious, easy recipe that everyone loves!

Sunshine Hummus Melts

I made this for my husband and me. I used 100% whole wheat bread, storebought hummus, granny smith apples, and sharp cheddar. My husband picked the apples off the sandwhich and ate them, but didn't like the combo together. I thought it was just "okay". I had high hopes for the sandwich because I love all the ingredients, but it just wasn't great. I ate it, but probably would not make again.

Grandma's Peach French Toast

I took this recipe to a church breakfast where everyone seemed to enjoy it - had requests for recipe. Unfortunately it all was eaten before I could try it. I did modify the recipe slightly - I used fresh peaches and blueberries, and also added the extra egg and 1 cup milk. I also dipped the french bread in the egg mixture before placing in the dish. It did not seem to be soggy at all when it was served.
