Chantal's New York Cheesecake

How many times can I say YUM?! This was only my second cheesecake I've ever baked...it was perfect! No cracks, no sinking...I was SO excited when I woke up 6 hours later and removed it from the oven! I did, however, as a safety precaution, put a little metal bowl of water in the oven next to it while it baked because I heard that prevented cracking. This was delicious! I did, however, have some trouble with the crust...2 tbls butter was just not enough. I ended up refering to this site's White Chocolate Blueberry Cheesecake (my first cheesecake) recipe to make the crust, using 1/4 cup butter and 2 tsp caramel but omitting the almonds. Delicious! I used 1 block of reduced fat cream cheese with 3 regulars, still tasted awesome! I baked it for my friends and they loved it...one even announced to everyone that I bake the best cheesecake in the world *grin* Thanks so much for this fantastic recipe!

Creme Anglaise I

I made this to go with this site's "Deep Dark Chocolate Souffle" and it tasted great...but is it supposed to be so yellow and gloopy? Well regardless of its funny appearance, it tasted yummy so thanks! ^^

Deep Dark Chocolate Souffle

This was my first time making a souffle and I must say that I was VERY NERVOUS, since my mother was very excited since she loves souffle...so there was some pressure *chuckle*. Aside from minor setbacks (I could not get the egg whites stiff so I settled for very foamy, nor did I know how to "fold" the batter so I gently pushed it around until mixed) it was quite easy, and I added 1 tsp lemon juice...perhaps because of my eggwhite and folding issues, it did not rise as much as I had hoped it would, but it did rise some, and sank a LITTLE, next time I will use 2 tsp lemon to see if that works better. I also threw in a handful of bittersweet chocolate chips, delicious! I can't wait to try it again. I served it with "creme anglaise I" from this site and haagen daaz vanilla fudge icecream...HEAVENLY. Just thinking about makes me yearn for more, and my family loved it too! Thanks for a wonderful recipe!

Healthier Graham Cracker Crust

yummy! I made this crust for the Crumble Apple pie...I must admit I was a little worried about how this crust would turn out since I had a 9.5" pan and had to tweak things...but it turned out great! I used lowfat vanilla yogurt and I didn't find it too hard to work into the pan, just press it with the bottom of a glass and you're good to go! Great crust, thanks for sharing, will def use again! ^^

Apple Crumble Pie

Amazing! I used a mix of granny smith apples and fuji apples...delicious! I layered the apples and the sugar filling and added 1 tablespoon flour to the filling like some people suggested. I made this with the Healthier Graham Cracker pie crust on this site...fantastic! Even my sister (who is very nice about my baking) was shocked with how good it was...yay! I was so happy, my friends loved it too. I will definitely make this recipe again! Oh yeah, and I used half brown half white sugar for both the filling and the crumble as people suggested, thanks for a great recipe! =)

Best Brownies

I don't know what I did wrong, I doubled the recipe and put it in a 10x15 but then changed my mind and lifted foil and put it into a 9x13...so maybe thats y the texture came out all weird...I added bittersweet chocolate chips and cooked it for quite a bit longer...well mine came out extremely fudgey and not at all like brownies...which made me sad at first but when you have EVERYONE at a bonfire raving about them and in disbelief that you home made them...well it's hard to stay down. =) So halfway through I stopped refering to them as brownies and called them fudge...because that was basically what it was...but I have to give 5 stars anyway because they were DELICIOUS. ^^ Thanks for sharing!

Luscious Spinach Artichoke Dip

Yum! I garnished with monterey jack cheese and served it to my family with toasted pita bread, delicious! I thought it lacked just a little flavor...perhaps more garlic next time? But my mom loved it, so that's all that matters! Great recipe, I used light sour cream and it still came out yummy =) Thanks Youri!

White Chocolate Blueberry Cheesecake

Fantastic. This is my first time baking a whole cheesecake and i couldn't be more pleased. i baked it for my sister's birthday celebration and all her friends loved it and complimented me profusely...(one even cliamed he was going to have a food orgasm haha)I followed the recipe exactly (except I did not have a food processor so I used my blender for the crust) but found that I had to bake it for an extra 20 minutes or so at 300 degrees, then turned off oven and left cake inside to let it cool for about half an hour before opening the door a crack. I let it sit like that for approximately another hour, then took it out and let it sit on the counter for a bit to finish cooling. I did not have time to refrigerate it overnight, but the few hours it had in the fridge was enough. I could not believe it: no cracks (even though I was lazy and did not use a water bath) and no sinking! I smothered some blueberry topping around the border, drizzled on melted white chocolate chips, wrote on it with icing and garnished it with 16 blueberries that I saved, it looked really nice and tasted even better. Oh yeah and I used chocolate graham crackers for the crust, yum! My friends and I are both raving over this cheesecake, look how long this comment is! Excellent recipe, I only wish I could give more than 5 stars! I will definitely be using this recipe again and again! THanks Scott for a great recipe!
