Raspberry Pie I

Reviewed: Oct. 14, 2008
This was my first fresh berry pie and it was fabulous. Maybe because I picked the berries myself:) *Note to all the virgin pie makers - put a pan under the pie to catch the juices that will spill out during cooking - or put a piece of foil under the pie.* I didn't dry the raspberries after washing and I added water so it was pretty runny in the baking process. It was great after it cooled for 12 hours. Yum!

Savory Crescent Chicken

Reviewed: Oct. 14, 2008
Yum - This was really great and fast. I used two 6 oz. packages of pre-cooked chicken and it turned out great. There was a little chicken mixture leftover so I heated in the microwave and ate it with tortilla chips - Yum!

These are great! I used agave nectar instead of corn syrup (lower glycemic index). Yum!

Stuffed Peppers My Way

Reviewed: Aug. 5, 2008
By far....the BEST recipe I've gotten from this site. Healthy, easy, AND it tastes great! I did add two things but I know it would be great without....two cloves of garlic and 1/2 cup of vegetarian sausage crumbles. I added these things with the tomato - it did add a little spicy "kick" to the pepper. My husband and I wanted to eat all four peppers but they were so filling we couldn't. To my great delight, the leftover pepper was very good the next day.

Great soup! Easy in a big crock pot - left on low for the day (6-8 hours).

Rum Balls II

Reviewed: Dec. 17, 2007
I'm not a fan of rum but these are superb! You will make about three batches of rum balls with the white cake that you have to bake. I also used more white cake crumbs than the recipe calls for (about two cups each batch). I had more luck (less mess) when I let the dough sit in the refrigerator for about 20 minutes before I rolled them into balls. I rolled mine in chocolate jimmies, cocoa, coconut, crushed candy canes. So easy and very tasty

Unbelievable Spinach Calzones

Reviewed: Jun. 27, 2007
Yummy. I used whole wheat frozen bread and it was ok, next time I'll try my pizza dough around it. Definately needs extra garlic!

Garbanzo Bean Salad

Reviewed: Jun. 27, 2007
I LOVED this salad. I did change some things but I'm sure it would be great as is...I used a cup of sliced green grapes instead of the apple and celery. I used a half cup dried cranberries instead of the nuts and I added four slices of crispy veggie bacon (could also use real bacon). The combination of tastes is wonderful!

Five Bean Casserole

Reviewed: May 10, 2007
So yummy...I made the vegetarian version. I omitted the bacon and sauteed the onion in olive oil. I used real mustard (yellow) and real garlic (3 cloves). I substituted beans. I used, black and pinto along with the garbanzo and baked. It did take quite a while to make. I might attempt it again in a crock pot. Definately worth the wait.

Almond Poppy Seed Bars

Reviewed: Feb. 24, 2007
I thought these bars were great. After reading the other reviews, I made sure to use the appropriate pan. I substituted almond extract for the butter flavoring...definately helped the almond flavor "come out". I also added a teaspoon of almond extract to the frosting. These bars are wonderful!

Autumn Harvest Soup

Reviewed: Nov. 22, 2006
I loved this soup! I didn't have any pecans and it was just great. Also, I tasted it before I added the heavy whipping cream and next time I make it I will leave it out. It was great either way...creamier with the whipping cream...less fat without. The combination of the apples and the squash were perfect. *One thing...it took longer than I thought to peel the butternut squash!

Couscous Salad with Chickpeas, Dates & Cinnamon

Reviewed: Aug. 1, 2006
Love this salad! I took the advice of another review and used raisins instead of dates (didn't have to chop them) and forgot to toast the pine nuts. With these little changes it saved some time. The combination of flavors is like a true comfort food!

Slow Cooker Lentil Rice Soup

Reviewed: Dec. 16, 2005
I thought the "soup" had very good flavor so I didn't mind much that is wasn't really a soup. I will definately try one of the suggestions by only using half of the lentils and rice.
