Easy Arugula Salad

Very Good! My husband and I eat raddichio & arugula salad seasoned with olive oil and red wine vinegar everyday with dinner. This was a nice twist on our usual favorite. I did use our red wine vinegar in place of rice vinegar and omitted the avocado since I didn't have one. Still excellent - Thanks Kelli

Zucchini Coconut Loaf

Awesome! I have made this several times already. I even tried lightening it up a bit. I mixed 1/2-cup Splenda and 1/2 cup sugar, and 3/4-cup wheat flour with 3/4 cup white flour. The results were good, but still not as awesome as the original. I will make the lightened version for my household, but when it comes to giving it away I will stick to the original. PS: Unbelievable but true - I recently tried to double this recipe, but I accidently only added 2 cups of flour instead of 3 cups. The result was more like a zucchini cake. So I went to the store and bought some cream cheese frosting and everyone raved about it! They are still saying I make the best zucchini bread out of our whole big Italian family!

Grilled Tilapia with Mango Salsa

Awesome! As soon as my husband took a bite, he proclaimed that this is a 5 star recipe. Very easy to make. I followed the directions exactly as written. Personally I don't care for fish, however even I have to admit this recipe is fantastic.

Great! Reminds me of the county fair. The size of your onion does matter for cooking time. My medium size onion was done in about 45 minutes.

Sauceless Garden Lasagna

What a bummer! I was really excited to use up all those garden fresh veggies. Maybe I made some bad choices and that's why it turned out this way. My result was a watery mess that didn't hold together. I pre-cooked my noodles because I didn't have any no-cook ones. However I didn't decide to cook the noodles until after I had the zucchini, cheese,spinach mix all together, so that sat for about 20 minutes. There was a significant amoutn of liquid at the bottom of that bowl, so I was hoping tht mine would not be watery - boy was I wrong! I seriously had 1/2 inch of water on the bottom of my dish. Maybe if I were to sweat out the zucchini, but still there was nothing in this to make the lasagna stick together. All the tomatoes just slide right off the noddles when I served it. The overall taste was good, but way too much work for the end product. Sorry :(

Salmon and Pesto with Rice

Easy! This recipe was very easy...I didn't have white wine so I used extra dry Vermouth. I cut the recipe in 1/2 for two people with left overs. I left my fillet as one big piece and sprinkled Parm over the top before serving. Try it, it's a great weeknight meal.

Pepper-Crusted Beef Tenderloin with Chocolate-Port Sauce

Yummy! My husband made this for my birthday, knowing that I love fillet and chocolate. He did reduce the chocolate to about 1.5 oz, which was perfect. We don't have peppercorns or coarse salt on hand, so he used the basic kitchen variety of salt and pepper and still resulted with a bit of a pepper crust. Good enough if that's all you have on hand, but I am sure the fresh crushed peppercorns would have really crusted up nicely.

Barbequed Pineapple

Really quite good. Wasn't exactly the tropical side dish I was looking for - but my fault, I should have known better once I read the ingredients. It tasted like a wonderful fall dessert with a sweet tangy twist.

Ramen Noodle Stir-Fry

Great idea to use Ramen Noodles. We used marinated chicken and made our own sauce (since my chicken was teriyaki flavored, a teriyaki sauce). Like I did when I was in college, I just put the ramen in a 2 cup measuring cup full of water and microwaved it for 3 minutes - stirring once - to cook the noodles - then drained - turned out perfect. Thanks for the idea, Ramen was a nice change from rice.

Every time I make this recipe I get tons of compliments. Even my relatives that hate healthy food chow this down. I too cut down the amount of ranch seasoning to about 1/2 a package, and it's just perfect.
