I'm a stay at home mom to Jessica 4 1/2 years old, and love to cook up good dinners for us to share as a family, especially dinners that make great lunch leftovers.
My favorite things to cook
Holiday baking is my specialty, but I love to make casseroles, one dish type of meals, also salads, soups and anything my daughter helps me to whip up.
My favorite family cooking traditions
My parents passed when I was young, so making the dishes they made for me as a child is very special to me, like my Mom's shrimp macaroni salad, her hamburger casserole, and my Dad's Manhattan clamchowder and his special pancakes. My mom was also a great holiday baker, I do her butter cookies every year!
My cooking triumphs
My hand painted holiday chocolates, including a X-mas tree chocolate meatloaf ( recipe adapted from one on this site) and cheese onion enchiladas.
My cooking tragedies
My one attempt at making bread, the yeast was expired, which I noticed when the bread was done and it was brick like in taste, texture and weight!

Three Packet Slow Cooker Roast
tried this recipe last weekend, and I had some reservations about the sodium content, it came out awesome. I added NO salt to it, and it was perfectly seasoned and the gravy was out of this world. I only made some very minor adjustment, such as adding quartered red potatoes and some diced baby carrot, also added some thick sliced Vidalia onion to the bottom of the crock pot for the meat to rest on. It was a hit with family and friends, and used the leftovers shredded on toasted rolls for sandwiches. All in all, a great quick recipe to use.

Fluffy Pancakes
Didnt have buttermilk or vinegar, but said what the heck and tried it anyway...and success, I am sure they werent as fluffy as they would have if I had used all the ingredients, but still tasty and light, and using the measurements given, i got exactly six medium to small pancakes. Family is thrilled and I am glad to have found a simple recipe! Thank you Kris!

Slow Cooker Beef Stroganoff I
Jessica, thank you for posting this fantastic base recipe, I like many others did not follow it to the letter, but without your recipe wouldnt have tried it at all! I give this 5 stars because your base recipe is the cornerstone of it all! I always read the reviews of whatever recipe I am going to try, and then make my own changes accordingly. I had a few pounds of cube steak that I wanted to use up and make tender, and this fit the bill...I sliced some onions thick and layered them first, then I cut up the cube steak, didnt brown or flour it at all....put in half a pack of beefy onion soup, tablespoon of Lea and perrins, cup of water, two cans of golden mushroom soup (we like a thick gravy here, lol) and about a heaping teaspoon of ground pepper....let that all simmer in the crock pot for about 5 hours...then added about 8 oz of fresh sliced mushrooms...let it cook on low another hour...then added half a bar of low fat cream cheese then 8oz of sour cream...served over wide egg noodles and it was a HUGE hit in my household of three...made enough that we had it again last night and it tasted even better! Great use for cube steak btw, a good cheap option...Thanks again Jessica, this will be a staple in my house this winter!
