Flax and Sunflower Seed Bread

Love this Bread! Since I didn't have any whole wheat bread flour, I used the regular bread flour and white whole wheat flour I had, and added 2 TBSP of vital wheat gluten. It rose beautifully and came out great. Thanks for the recipe, Erna!

Mom's 'Sweet 'n' Sours' Pork Ribs

I subbed 1 lb. cubed pork for the ribs (it was what I had), but followed the recipe as far as boiling the meat, draining, browning in oil, and simmering in the sauce (the time was a little shorter than as written). My 4 year old daughter (who doesn't often finish her dinner) raved about it served over white rice, and even had a second plate! My super picky husband said it's his favorite pork dish I've made in 7 years of marriage. This one is a definite keeper for us. I steamed some broccoli and we loved it with the sauce. It was similar to eating Chinese food, but better because it was homemade and much healthier!

Pumpkin Casserole

We love this dish at our house! I make it with brown sugar instead of white, and pumpkin pie spice instead of cinnamon due to our personal tastes, but it still gets rave reviews every time! Plus, it's so easy, and it's an atypical side for a regular weekday dinner. And you can't beat adding pumpkin to a meal in the fall! Thanks for sharing this, Lori, it was just what I was looking for! (I should also add that my kids, 2 and 4, think this is a dessert!)

Pizza Roll-Ups

I made this tonight but instead of 'pizza', I made BBQ cheeseburger filling. Used 1/2 lb ground beef, a generous 1/2 cup of BBQ sauce (I used the recipe "Bar-B-Que Sauce" to make my own), a generous 1/2 cup of shredded sharp cheddar cheese, and 2 (8 oz) cans of Pillsbury Lowfat Crescent Rolls. Followed the instructions same as for this recipe and they came out great! Use the directions and measurements from this recipe and see what other creations you can come up with! YUM!EE!(as my 3 year old said) :)

Asparagus Potato Soup

I made this sans onion & bacon (personal preference & I didn't have any!) since I had some fresh asparagus & potatoes on hand. I used fat free 1/2 & 1/2 instead of heavy cream, skim milk, and topped with 2% shredded sharp cheddar. It got rave reviews from my very picky husband and my almost 3 year old daughter. I thought it was delicious (and healthy!) as well. Definitely a keeper in our house! Thanks so much for sharing!

Favorite Banana Blueberry Quick Bread

I didn't have any shortening, so I substituted 1/2 cup of blueberry (no sugar added) applesauce. It was delicious with this! I also took the suggestion of another reviewer and added a dash of cinnamon and a dash of vanilla to the applesauce (shortening) before adding the sugar, eggs & banana. I used 1/3 cup brown sugar & 2/3 cup of white sugar. I baked muffins (25 min.) and mini-loaves (30 min.) Bread came out golden brown around the edges and very moist. Thanks for sharing such a yummy recipe! My 2 year old daughter loves it! :)
