Baked Potato Soup III

Look no further for the perfect soup...add an additional cup of milk if you prefer your soup thinner. I make this at least twice a month during the winter & it freezes well!

Best Big, Fat, Chewy Chocolate Chip Cookie

These are exactly as advertised....followed the recipe to exactly! The only note I would add is that they are VERY chocolatey! I cut down on the two cups of chips!

Carrot Cake III

Perfect! Omitted the nuts from the frosting...next time will cut the sheet in middle horizontally and use half the frosting for a yummy sandwhiched middle...will be on my Easter menu! ;)

Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.

Simply satisfying, I used take and bake chocolate chip cookie dough..VERY quick! We ate half and sent the other half to the babysitters house for the first day of school...kids and parents *Loved* them!

Downeast Maine Pumpkin Bread

I used 2 cups pre spiced pumpkin pie filling that I had left from a previous recipe, and also added the spices as called for. I added a teaspoon of vanilla, and did decrease the sugar by 1/2 cup. I made 12 muffins (w/ 1/3 cup batter each) and 2 medium sized loaves. Yummy warm with a spread of cream cheese!

Tiramisu Layer Cake

I lose some points for presentation myself, b/c I only have two 9" pans, making this only a dual layer cake. If anyone is interested, the batter makes just under 4 cups, which may help you when trying to divide it evenly into the pans. Followed the ingredients to a tee, I love classic tiramisu, and this is a great variation!

Baked Slow Cooker Chicken

I followed directions to a tee-except my bird was 4 lbs- same cook time. Chicken was tender and moist- yes, it was greasy but used the drippings to make delicious gravy! Served with mashed potatoes, green beans, butter noodles and rolls for a super yummy Sunday night dinner!

Strawberry Cake from Scratch

We LOVE LOVE LOVED this recipe! I did use fresh strawberries and made my own puree-they were overly ripe and sweet enough to not need sugar. Others have spoke on the texture of the cake...I made an easy cool whip/cream cheese frosting (which was PERFECT for this cake!) and had a small slice before putting it in the fridge, the cake was more light and airy. After a few hours in the fridge, the cake was more dense, but NOT in a bad way! Maybe the gelatin in the recipe? Who knows, who cares, TRY IT;)

Mashed Potato Casserole

I opt. for 8 oz light sour cream vs. the onion dip. Also use light cream cheese and cut the butter down to 1/4 a cup...I have had it all different ways, very yummy and much faster than cubing/boiling etc!

Cheesy Beans and Rice

EXCELLENT! Quick, cheap and healthy! I actually used a can of chili hot beans. Topped with sour cream and served with cornbread muffins. We took the leftovers with tortillas to work for lunch.

Cheese Corn Spoon Bread

Super yummy, just a quick note, one time when I went to make this I was out of sour cream (DREAD!!!) but substitued with cottage cheese and it still turned out fabulous! Goes well with enchiladas, chili, etc!

Brownie Batter + Cupcake = The SECOND BEST Cupcake. Ever

I must have made JUMBO size, b/c I got 24 just right cupcakes (not 48)! Used Ghiradelli Double Chocolate Brownies (chocolate chips in the mix!) and everyone *Loved* them! Also made LTH's cookie dough cupcakes along side these-depended on the person which one they loved best! Either way, YOU CAN'T GO WRONG!

Best Cream Of Broccoli Soup

Can't go wrong with this one! My son has been eating this since I first introduced "real" food! For those of you who cook in batches, this freezes very well! I do use butter. I prefer the consistancy of this soup best when I use a potato masher.

Tomato Soup I

If you are looking for a no frills tomato soup...this is it! I've never made homemade tomato soup, and I'm not looking any further! I used butter instead of margarine...and I have used 2% milk to cut down on the calories, with great results! I do run this thru the blender before adding the milk/cream!

Hobo Dinner

We use to pack these in the cooler & bury them in the fire coals while camping...As others have suggeseted, def. add onions, potatoes & cabbagge. Polish sausage works well if you want to subsitute the ground beef. Give your oven a rest & use your grill!!! YUM-O!

Roasted Pork Loin

Very moist & FULL of taste! Made it for my husband for valentines day! Here's some tips! 1.) Always use your meat thermometer, if your loin is not moist, you probably overcooked it, all ovens and bake times vary...you paid good money for your meat, so cook accordingly! If you buy a loin that is packaged as one, but opens into two, Seperate them & roast side bey side. Stick the thermometer in the largest lion. I always take mine out at 165 degrees. 2.) I used Sherry as my wine. I poured the sherry in the pan with my loin, and afterwards added a little chicken stock and cornstarch for EXCELLENT gravy!!! 3.) While you have out the Sherry, reduce some mushrooms in Sherry, YUM! This is a recipe that is too tasteful and easy to pass up!!!!
