Italian Meatball Sandwich Casserole

I know some hate when others post reviews that tell all about what they did differently, but I figure...hey, many people have made this & found it to be great....so why not tell what I did...maybe it will inspire you!!! 1.) I made my meatballs out of ground chicken! They only need 15 mins. at 400..just be sure to lightly spray your sheet with cooking spray! I also combined the minced garlic in with my chickenballs.... 2.) As another reviewer suggested...I omitted the mayo & replaced it with ricotta...did I mention that the ricotta/cream cheese mixture was good enough to spread on my body?!?! 3.)Probably the biggest change I made was how I used the bread....I bought the roundish italian loaf, did my best Subway sandwhich artist impression, and removed the top portion. I then removed most (but not all) the fluffy bread guts to make a bowl (and tossed the guts). I smeared the cream/ricotta cheese mixture on the bottom & sides of the bowl, and added some to the underside of the breadbowl lid. (This way b/c I thought spreading each breadcube with the mixture sounded too time consuming...and half the breadcubes prolly would of ended up popped in my mouth!!!) I then layered the cheese & chicken balls, baked 25 minutes WITHOUT the breadbowl lid, and about 5-10 with the breadbowl lid in place...to serve, just slice....my "boys" (my fiance & his best friend) raved over this for at least an hour....and they are food snobs!!!!

Basic Bean Soup

This is a great recipe but I must admit I did make a few small changes...I added 2 stalks of celery, a bay leaf, 1 t. of garlic powder. I also set out a bottle of ketchup for those who prefer it instead of adding it directly to the mix. (Just a small amount of ketchup absolutely MAKES bean soup...the country restaurant here serves theirs with a dallop in the center!!) Also, I combined everything in my crock pot and cooked on low for 6 hours.....therefore no boiling...so easy & so good with cornbread!

Mashed Potato Casserole

I opt. for 8 oz light sour cream vs. the onion dip. Also use light cream cheese and cut the butter down to 1/4 a cup...I have had it all different ways, very yummy and much faster than cubing/boiling etc!

Roasted Pork Loin

Very moist & FULL of taste! Made it for my husband for valentines day! Here's some tips! 1.) Always use your meat thermometer, if your loin is not moist, you probably overcooked it, all ovens and bake times vary...you paid good money for your meat, so cook accordingly! If you buy a loin that is packaged as one, but opens into two, Seperate them & roast side bey side. Stick the thermometer in the largest lion. I always take mine out at 165 degrees. 2.) I used Sherry as my wine. I poured the sherry in the pan with my loin, and afterwards added a little chicken stock and cornstarch for EXCELLENT gravy!!! 3.) While you have out the Sherry, reduce some mushrooms in Sherry, YUM! This is a recipe that is too tasteful and easy to pass up!!!!

Cheese Corn Spoon Bread

Super yummy, just a quick note, one time when I went to make this I was out of sour cream (DREAD!!!) but substitued with cottage cheese and it still turned out fabulous! Goes well with enchiladas, chili, etc!

Rainbow Clown Cake

Just got done making these with my two year old. Was a great way to practice his colors and culinary skills;) I should post a picture of his tie-dyed face b/c I caught him robbing the bowls of batter!! I followed the cake mix directions for bake time and did cupcakes...these are a keeper! Love the other reviewers ideas for holiday themes, he's a 4th of July baby, so I can't wait to do some RWB for his birthday! Thanks for sharing;)

Tiramisu Cheesecake

This turned out so beautiful that several people asked where I purchased it...not a single crack!!!! If you like tiramisu, you will love this cheesecake...very rich! The only change made was not intentional, I only bought one package of lady fingers...7 oz size....and it turned out to be PLENTY for the crust, especially considering the $ savings buying only one package. Thanks for a great recipe!!!

Lemon Poppy Seed Bread

Oh YUM!!! I made 1 loaf (60 mins of baking) & 12 muffins (25 mins of baking) from the batter. After reading all the reviews, these are the changes I made...I used 3 Tablespoons of poppy seeds, in addition to the lemon extract, I added the juice & zest from one fresh lemon. I cut the sugar to 2 cups in the batter & to 1/2 cup in the glaze, and cut the oil to 1 cup. I microwaved the OJ to help dissolve the sugar. These muffins were SO moist and delicious!!!!!!

Brooke's Best Bombshell Brownies

These are in fact very sweet and very chewy, but they OOZE butter and sugar...I followed the recipe to a tee and pulled them out of the oven at 40 minutes to still find raw batter in the middle....after an addtional TWENTY MINUTES they were done! Not to mention very $$$$ will all the butter, but I thought I would give them a try with all the good reviews!

Italian Meatball and Cheese Tortellini Soup

Made it twice: first time as written, second time wanting more flavor + a few of my faves. The second time I used my homemade meatballs, subbed green beas for a can of rinsed northern beans, and 3 good handfuls of baby spinach instead of kale. Still missing a lil something for my taste, so on the third go round Im going to try a can of tomato sauce, too :) Makes ALOT of soup!!!

Cheesy Beans and Rice

EXCELLENT! Quick, cheap and healthy! I actually used a can of chili hot beans. Topped with sour cream and served with cornbread muffins. We took the leftovers with tortillas to work for lunch.

Cheesy Chicken Pot Pie

This is by far my faorite chicken pot pie recipe...a great variation is buying refriderated pizza dough, rollig it out, cut into 4's & using the filling part of this recipe as your calzone filling!!! YUMMY!

Home Made Top Tarts!

My two year old & I made these together! They are such a good idea...we did some grape & some brown sugar and cinnamon...I preferred the latter! Can't wait to experiment with the filling a bit, really good recipe to involve the kids, thanks so much for sharing!
