Easy Ham and Cheese Appetizer Sandwiches

I LOVE onion, but this was way too pungent! I would modify them and give it another go, less onion & less butter! OR-double the amount of rolls used.

Cheesy Beans and Rice

EXCELLENT! Quick, cheap and healthy! I actually used a can of chili hot beans. Topped with sour cream and served with cornbread muffins. We took the leftovers with tortillas to work for lunch.

Home Made Top Tarts!

My two year old & I made these together! They are such a good idea...we did some grape & some brown sugar and cinnamon...I preferred the latter! Can't wait to experiment with the filling a bit, really good recipe to involve the kids, thanks so much for sharing!

Would make it again! Followed ingredients but used fat free whip...excellent results, light & tasty. Frosted "Strawberry Cake from Scratch" from this site, good combo! Thanks!

Strawberry Cake from Scratch

We LOVE LOVE LOVED this recipe! I did use fresh strawberries and made my own puree-they were overly ripe and sweet enough to not need sugar. Others have spoke on the texture of the cake...I made an easy cool whip/cream cheese frosting (which was PERFECT for this cake!) and had a small slice before putting it in the fridge, the cake was more light and airy. After a few hours in the fridge, the cake was more dense, but NOT in a bad way! Maybe the gelatin in the recipe? Who knows, who cares, TRY IT;)

Curried Honey Mustard Chicken

This was my first venture into cooking with curry, was surprized that I liked it!! I like that this recipe incorporated the honey mustard. Made some fried rice with coconut to serve with it. Was very quick to throw together in the AM so the hubby could just pop it into the oven.

Rainbow Clown Cake

Just got done making these with my two year old. Was a great way to practice his colors and culinary skills;) I should post a picture of his tie-dyed face b/c I caught him robbing the bowls of batter!! I followed the cake mix directions for bake time and did cupcakes...these are a keeper! Love the other reviewers ideas for holiday themes, he's a 4th of July baby, so I can't wait to do some RWB for his birthday! Thanks for sharing;)

Tater Tot Casserole I

It's exactly as advertised, simple and satisfying! Gave it three stars because the cook time was so far off- mine took an additional 15-20 minutes with the temperature turned up to 375 to set up! Next time will add more eggs & some onion! I saved the sausage grease and made a pan of gravy while this baked and served on top- yum!

Easy Mexican Casserole

Very good! I work late one night a week, and am always looking for an easy casserole I can assemble in the AM that the hubby can pop on the oven that night. Was worried about the chips getting soggy, but the consistancy was great! Followed everything to the letter, will make again, my 2 year old even loved it!

Perfect! Omitted the nuts from the frosting...next time will cut the sheet in middle horizontally and use half the frosting for a yummy sandwhiched middle...will be on my Easter menu! ;)

Brownie Bottom Cheesecake

Yummy! Followed ingredients to a tee (aside from using store brand!) Did decrease brownie layer bake time by 10 minutes...I do hate hard brownies! Result was scrumptious...this was my trial run for Easter...the only change I will make next time is some chocolate chips in my brownie batter...trying to replicate my fave boxed ones! This is a keeper!

Baked Slow Cooker Chicken

I followed directions to a tee-except my bird was 4 lbs- same cook time. Chicken was tender and moist- yes, it was greasy but used the drippings to make delicious gravy! Served with mashed potatoes, green beans, butter noodles and rolls for a super yummy Sunday night dinner!

Overnight Caramel French Toast

Made exactly as written, and Mine ended up soggy, too. Will modify & try again, though..because the flavor was great...like other reviewers I did flip the casserole dish on a platter so that the caramel was on top! Next time, will add pecans to the caramel layer, and may cube the bread. Will keep same number of eggs, but decrease milk!

Buffalo Chicken Fingers

Based on other reviews, I did substitute the water for 2 T of Franks Red Hot...These are just perfect! Without the Franks, I do not believe these would have had enough "zing", but tonight they were just buffalo enough, without being too hot for my 20 month old. Cut each breast into thirds. I am a calorie counter, so when cooking, I usually pair my meals with something "calorie ridden" that the hubby can still enjoy, and myself a small serving. We had these with steamed broccoli and HIGHLY reccomend pairing with Pioneer Woman's Perfect Au Gratin Potatoes...they cook at the same temp! Already copied this to the recipe book!

Crab Rangoon III

To be fair, I did modify the recipe by substituting water chestnuts for green onions, because I know thats what my local buffett uses. Also, I did only use 1 can of the crabmeat per others reviews. The result was yummy, BUT these are missing a "sweetness" that I'm used to from my buffett! Next time, I will tinker with that, and then these will be perfect for me! The hubby liked them as is!
