Me and My Love
About this Cook
I have been married 10 years, love to cook for people, and people love to eat my cookin'! :)
My favorite things to cook
I really enjoy cooking period. Don't really have a favorite. I suppose it depends on the day, sometimes I really love all of the details, the long prep time, all the way to the gourmet finishing. But other days I love to keep it simple and easy.
My cooking tragedies
Well, when we were first married, I invited the family over to dinner. I slaved all day over the stupid "porcupine meatballs" and I just couldn't get them to work, the meatballs weren't balls at all. It was porcupine meat mush soup. So we shoved it in the closet and ordered pizza. They eventually found out later. It still tasted good, just didn't look like it was supposed to! Another time I did a crock pot meal and had a HUGE amount of people over, I obviously put WAY too much food in there for it to cook in the amount of time I had available. It wasn't done AT ALL when it was dinner time. I had to put food on plates and MICROWAVE them individually to get them to be done enough to eat! BAD!!!

Country Sausage Gravy
I made changes I wasn't particularly happy with, so my rating is a 5 star based on making the recipe without my changes, and the fact that my husband absolutely loved it, I can foresee this as excellent when made as written. I didn't have cows milk, I have soy milk, so I used that. It seemed too sweet. It may have been the soy milk. I will try this again and use cow's milk as written.

Chef John's Buttermilk Biscuits
I give it a 5 star rating because I made changes and it didn't turn out as expected, so I will remake these and rerate if necessary. I used my food processor and zipped everything up in it. It was fast and easy, but they did not fluff up. They were quite flat and a little dry. But the flavor was excellent. Next time I will mix everything all by hand and see if being gentler with the dough yields a better, fluffier, moister biscuit.

Chicken Pot Pie IX
Superb! I read the reviews before I made this, so I made a few adjustments... I added two boullion cubes with the chicken and veggies while they were boiling. Then, when I drained the chicken and veggies, I reserved the liquid for use in the "gravy" portion. While making the "gravy" I doubled all of the ingredients in it. When the gravy was done, I mixed about 1-1.5 cups of the gravy into the chicken and veggie mixture. I used a deep casserole/pie dish. I used regular 9inch pie crusts (next time will get deep dish tho) and lined the dish with the crust, poured in the chicken and veggie mixture and topped it all off with the rest of the gravy (or as much as would fit. I had about 1/2 cup of it left over). It only took about 30 minutes in the oven. DIVINE! My hubby has been telling EVERYONE about this pot pie, and my mother-in-law said that this was better than ANY chicken pot pie she's EVER had! This recipe will go into our regular rotation!
