Stuffed Green Peppers I

Where have you been all my life? This was killer amazing. I used red peppers instead of green because they just taste better. Obviously you need to season the filling to taste... I used garlic salt, pepper, more Worcester sauce and more cheese. I added alittle diced peppers. I cut the peppers lengthwise instead of chopping of the top. Then you get more, smaller portions. I only needed one can of tomato soup, but it was a perfect complement! Perfect winter comfort food!

Healthy Banana Chocolate Chip Oat Muffins

First time I made them just as the recipe stated. They were pretty tasty straight out of the oven, but after they cooled they were thick, bread-y, and chewy. My kiddos wouldn't even finish them. (and they are NOT the type to turn their nose up at Banana chocolate chip muffins). Take two I tweaked. Instant oats instead of rolled, a little vanilla and salt, and a good healthy glop of sour cream. And a tiny bit (about half Tbs) of softened butter. Now THAT was yummy. Yes, I know, I'm defeating the purpose of "healthy" - but one thing I have learned in my motherhood. It doesn't matter how healthy something is if none of your kids will eat it!

Best Ever Crab Cakes

Super yummy! I made these on a whim with a two dollar can of ghetto wal-mart crab meat and onion powder instead of green onions and they were still good! (Now THAT is saying something) For a sauce I ate them with a mix of mayo, sour cream, and cilantro. nice little lunch!

Whole Wheat Blueberry Beet Muffins

I can't believe I loved it! This was totally a guilt menu item from realizing I don't eat veggies, but they were SO GOOD! I did cheat by switching in about 1/3 of the flour to white and adding a strusel topping (1 Tbs flour, 4 Tbs sugar, 2 tsp oil), but my husband was amazed at how much he liked them. We played a guessing game on "guess the secret ingredient" and I won. :)

Kraut Bierocks

Really good! But I must say I have a few qualms with the recipe... The flour amount is not enough. I added a ton! It could really be more specific. I had never tried, or even seen a beirrock before. How big of a piece of dough? How flat? How wide should it be? What exactly qualifies a "spoonful"? My result was a wonderful, albiet overly bready creation. I'll do it again!

Chicken with Chipotle

Killer good! The only change I made was after the chicken was done, I took the sauce and simmered it with some corn starch/cold water to make it creamier and it covered my chicken better while we ate it. SOOOOO good! A little too spicy for me, but that's my own fault - add the peppers bit by bit and taste as you blend!

The Best Lemon Bars

Really really tasty! I went with them because there was too much disagreement in the comments for the other lemon bar recipe on this site. I'm glad I did. I used two lemons (I think I drained every last drop of juice out of them) and the zest on both. (ZEST BEFORE YOU JUICE!) My only qualm was that the crust was a pain to get out neatly on the edge, and the crust could have used a tiny bit of salt for flavor. Perhaps the submitter assumed we were using salted butter?

Roast Sticky Chicken-Rotisserie Style

Mmmmm....perfect spice mixture. I only let my chicken sit in the spices for about 45 minutes...I also added a little olive oil to the ziplock bag... I cooked it in my convection oven for 40 minutes at 375 and it was ridiculously moist and tender. Well done!
