Garlic and Parmesan Chicken Wings

SO GOOD! I'm sure to make these again & again! I'm really picky with wings; they have to be cooked thoroughly...loved the parboiling method.

Chicken Enchiladas I

My family & I loved this dish! I've never made enchiladas before, so I wasn't sure what to expect. I guess I didn't cook it down long enough (a bit soupy), so I just filled the tortillas with a slotted spoon, mixed the left-over "gravy" with the taco sauce, then poured over all, topped with cheese, and baked as directed. Thank you for sharing!

Anchovy Linguine

This was so yummy, fast, and easy! I made this for Ash Wednesday, and my family loved it. I can see having it as is, or adding capers, shrimp, clams, mussels, etc. to jazz it up. Thanks for the great recipe!

Spicy Orange Chicken

We loved this! I used the veggies I had on-hand (sugar snap peas, orange bell pepper, celery cabbage, water chestnuts), used apple cider vinegar (didn't have rice vinegar), and left out the spicy stuff (yes, I'm a wimp!). I used the recipe more for technique than ingredients, but I really think it was the vinegar in the marinade that made it shine. Thanks for another great one in my recipe box, Chef John!

Peanut Blossoms II

This was the best recipe I've found for this cookie! I used butter instead of shortening (not a fan), otherwise followed the recipe as written. The batter was nice & fluffy, and the cookies turned out wonderfully! I made some with milk chocolate kisses & some with dark chocolate; I can't wait to make variations with different types of kisses & "candy corn" pumpkins for fall. I'm not a baker, more of a cook (I really don't like to bake, actually), and this recipe gave me a great payoff...my 11-year-old son was VERY happy to have some home-baked cookies from mom! Thank you so much!

Flavorful Beef Stir-Fry

This was really good! I doubled the recipe for the sauce (as per other rating suggestions), but I shouldn't have doubled the cornstarch (my fault, dumb mistake)...so I just added some beef stock to thin it down a bit. I used Sutter Home chardonnay, and I omitted the onion & carrots & added an orange bell pepper sliced into strips because that's what I had on hand. The veggies were cooked perfectly, and my husband & son said "Keep that recipe!" One small serving of leftovers, but only because my sister made us homemade egg rolls to go with it. We'll be making this again...thank you :)

Dad's Asian Slaw

OH YUM! I've had this before but never made it myself. I used Newman's Own Oil & Vinegar dressing, oriental-flavor ramen, and cut the sugar to a little less than 1/3 cup...now my son & I are trying not to eat it before my husband has a chance to get home from work! Thanks for the GREAT recipe!

German Rouladen

This was really good. Instead of the beef bouillon, I used a package of Knorr's Sauerbraten gravy mix that a friend got from Germany. We had it with red cabbage, applesauce, and barley cooked in beef broth. Thank you for a nice recipe!

Broccoli Cheese Soup

AWESOME!!! I used 1 1/2 pounds of fresh broccoli florets, I added my cornstarch to one of the cups of cold milk, and I omitted the 1 cup of water...it was perfect! Thank you for such a great recipe for my favorite kind of soup!

Chicken Pot Pie IX

YUM! I doubled the celery & added mushrooms (my family loves them), seasoned with Essence, and baked the bottom crust for 7 minutes before filling. My 5-yr.-old couldn't wait, so I gave him a few spoonfuls of filling to eat while it baked. Again, YUM!

Tommy's Ham Casserole

We really enjoyed this one, although I did doctor it up a bit (can't help myself sometimes!). I sauteed some onion & celery in butter, then mixed it into the cooked macaroni...stirred in the other ingredients and added an 8.5 oz. can of peas (drained). Yum!

Black Bean Salad

This is an awesome recipe! I can see me making this again and again! Also a nice topping for fish & chicken. Just poach fish (I use salmon or tilapia)in orange juice, and spoon some of this on top or on the side. Serve with coleslaw, potato salad, or macaroni salad..yum!

Shrimp Scampi Bake

This was DELICIOUS! Cut recipe in half, used 2 cloves of garlic, and served over angel hair (usually try the recipe how it's written to begin with, instead of screwing it up right off the bat) Yummy just as it is, but hubby suggested adding toasted pine nuts, I thought about adding some pesto...the possibilites are endless! Drizzled butter/garlic mixture over pasta, tossed, then topped with shrimp. My son, by the way, ate all the shrimp & pasta on his plate and continued on to mine!

Crispy Cucumbers and Tomatoes in Dill Dressing

Just what I was looking for! Had 4 tomatoes, red onion, & 1/2 cucumber on hand. Added a jar of marinated artichoke heart (drained), a handful of pimento-stuffed green olives, and a clove of garlic (minced). Delicious!

Chicken Piccata II

This is a keeper! I followed the advice of previous postings and pounded the chicken into cutlets. I also added fresh mushrooms & capers during the last 20 minutes of cooking...it turned out restaurant quality. I'll definately make this again and again!
