Dave's Mocha Chicken

I give this recipe 5 stars because my husband loved it and has asked for it again. He usually doesn't like new things. Plus I'm a vegetarian and not real experienced with cooking but this was easy to make and turned out well (even if I didn't get to taste it).

Tasty Buckwheat Pancakes

This recipe is a keeper. The first time I made these I used the ingredients listed except I substituted coconut oil for the safflower oil. I followed one reviewers note to let them sit, so I made the batter the night before and cooked them in the morning. They turned out great. I've since tried my own spin on the recipe and used 1/2 cup buckwheat flour and omitted the all-purpose flour. Also I used 2 Tbs of real maple syrup instead of the honey. These also turned out yummy, although they had a much more pronounced buckwheat flavor. Thanks for a great recipe!

Breaded, Fried, Softly Spiced Tofu

I'm usually sceptical about tofu recipes but I was very happy that it turned out so well. I don't like changing a recipe the first time but I did two things different. First I cut and froze the tofu for 45 min. I guess it is supposed to help the cosistancy of the tofu. The other thing was I used rosemary instead of sage because I didn't have sage. These turned out so great that my tofu hating husband acutally tasted them and thought they were "not terrible" :) and my 6 yr old son wanted some.

Mrs. Sigg's Snickerdoodles

I make these cookies all of the time and they always turn out wonderful. I've started using 3 tsp of baking powder instead of the baking soda and cream of tartar just for ease of shopping (I live in the Bahamas and cream of tartar isn't always availible) but the cookies still turn out great. Just as a personal note, I have been experimenting with whole wheat flour in baked goods (to make the sweet treats a little better but these don't turn out well with it.

Whole Wheat Pancakes

These are light and tender and very tasty. I usually cut down on the milk because I have trouble flipping them when they are runnier but they are better when you stick to the recipe.

Quinoa and Black Beans

Garlic Ginger Tofu

I'm not sure what I did wrong but this turned out tasteless. I even tried more garlic, more ginger and tamari after I realized that it had no flavor. I think part of the problem is I had no "juice" as one reviewer had mentioned. I too halfed the recipe since I'm the only tofu eater. Maybe if I had cut the tofu into smaller pieces? Or added water? At least it was salvagable as it had no flavor, I just used it in another dish.
