Salsa Chicken Rice Casserole
It was easy enough, and had a nice flavor. A little too much chicken for my taste, though. I used 3 breast halves instead of 4, and it was still too chicken-y. Next time, I'll use two. Also, I served it up with chopped scallions, diced avocado and a dollop of sour cream
