Super yum!! You can buy quinoa at Trader Joes (it comes in red, multi-color, and white). I used the white quinoa. I cooked the quinoa in a rice cooker in vegetable broth PRIOR to starting the recipe. Then, I sauteed the onions and garlic. Then, threw in the quinoa, stirred in cumin and some oregano, and black beans and corn. 2 cans WAS a bit too much, but I thought 1 can wasn't enough. So maybe 1 1/2 cans? It was really really delicious - my hubby, picky 4 year old, AND baby all ate this complete protein-packed meal. (Mom heaven!) I cooked this with the Salsa Chicken recipe on this site (in a crockpot). Also, served with soft avocados. what a wonderful meal. Thank yoU!!
