Black Beans, Corn, and Yellow Rice

This is a great recipe! As others have mentioned it is very versatile. It would make a nice side dish or great burrito fillings (we used it for burritos topped with shredded cheese and sour cream). I make my own yellow rice (1 1/2 cups rice, 1/2 tsp salt, 1/2 tsp turmeric, 1 tsp onion flakes, 1/2 tsp garlic powder) I put all ingredients both the recipe and my rice recipe in the rice cooker and it came out perfect! My 9yr old LOVED it. I agree with others that some fresh cilantro would dress it up; however, I made it as is and it was great. This is also a PERFECT pantry/emergency dish since everything is shelf stable.

Ultimate Party Meatballs

This is a solid pot luck recipe. I'm sure it can be tweaked to earn that extra star; but, it is a real crowd pleaser as written. I mad this for a pot luck; but, I never got my dish to the event. Later that day I shared this dish with 11 other people (4 adults and 7 us-1 more kid and 1 more adult) and EVERYBODY loved it. Even my son who kept saying..."That looks like a lot of cranberry sauce and I don't like cranberry sauce." as I was getting the dish started. We made meatball subs out of this dish and they were great!

Harvest Pork Stew

I'm so sorry; but, I hated this. To be fair, I Rosemary is not my favorite herb and I have only ever had butternut squash mashed with butter and sugar. I made this exactly as written in the crock pot. I think if I omitted the rosemary and squash and added a bit of something else and thickened the broth to compensate for the missing...oh never-mind. That's too much work to re-write a recipe. This just did not make the cut for us.

Honey Of An Oatmeal Bread

I made this exactly as written; but, I substituted 1tbs of low fat Country Crock for the oil. It turned out great! This is a fantastic low fat bread! We will be making this again and again and again.

Baked Teriyaki Chicken

Great! Will line the pan next time. I doubled the sauce and it was too much. I also used low sodium soy sauce and that worked just fine. We don't eat dark meat, so I used boneless skinless tenderloins and they were done in 30 minutes. It really would be great on a bone in chicken cut though. I used low sodium soy sauce too since we need to watch our salt intake. EDIT: Now that I have had a chance to eat a whole plate, OMG this is GOOD! We serve it over chicken flavored rice. I don't even like Chinese food that much and I love this.

Seasoned Turkey Burgers

Wow! These are great! I made exactly as directed. I skipped the optional egg and only had a 1.25lb package of extra lean turkey. The burgers turned out great!!!! All I know is I'm hooked!
