Mom's Best Waffles

I picked this recipe since is was light on the oil. I wouldn't say these were the very best waffles ever; but, I would make them again. Any homemade waffles outshine those frozen discs in a box. I would suggest adding a bit of cinnamon or some other spice to give these a bit more of a flavor boost.

Bar-B-Que Sauce

Ok, I have to admit this sauce turned out way better than I expected and it was super easy to whip up. It is way better than anything in a bottle. As other people have mentioned this is a good basic sauce which you could add a little of this or a little of that to in order to make it your own.

Savory Herb Rice

I made this exactly as written. I found the soy sauce to be overpowering. It gave the rice a more "beefy" taste even though chicken base was used in it. I might give this recipe another shot using only 1/2 tbs of Low Sodium Soy Sauce. I agree with others the dish might be bland without it; but, for us the called for amount was too much.

White Bread For The Bread Machine

Ten Minute Enchilada Sauce

I made this as written and found the chili powder was too overpowering. I wish I had read other reviews before making this. This might be a keeper with a few changes; but, I would not make it again as written.

Taco Seasoning I

We are never going back to store bought taco seasoning! This is so good and it's really nice to know exactly what is in it! I made it exactly as written. I love the red pepper in it; but, it might e a little spicy for kids. I'll probably leave it out or half it next time since my son does not like spicy food. This is a keeper!

Black Bean Hummus

This is so good! We had black bean hummus at a tapas bar while on vacation and fell in love with it. We were hoping to make something equally wonderful at home and this recipe gave us just what we were looking for!

Black Beans, Corn, and Yellow Rice

This is a great recipe! As others have mentioned it is very versatile. It would make a nice side dish or great burrito fillings (we used it for burritos topped with shredded cheese and sour cream). I make my own yellow rice (1 1/2 cups rice, 1/2 tsp salt, 1/2 tsp turmeric, 1 tsp onion flakes, 1/2 tsp garlic powder) I put all ingredients both the recipe and my rice recipe in the rice cooker and it came out perfect! My 9yr old LOVED it. I agree with others that some fresh cilantro would dress it up; however, I made it as is and it was great. This is also a PERFECT pantry/emergency dish since everything is shelf stable.

Ultimate Party Meatballs

This is a solid pot luck recipe. I'm sure it can be tweaked to earn that extra star; but, it is a real crowd pleaser as written. I mad this for a pot luck; but, I never got my dish to the event. Later that day I shared this dish with 11 other people (4 adults and 7 kids..plus us-1 more kid and 1 more adult) and EVERYBODY loved it. Even my son who kept saying..."That looks like a lot of cranberry sauce and I don't like cranberry sauce." as I was getting the dish started. We made meatball subs out of this dish and they were great!

Harvest Pork Stew

I'm so sorry; but, I hated this. To be fair, I Rosemary is not my favorite herb and I have only ever had butternut squash mashed with butter and sugar. I made this exactly as written in the crock pot. I think if I omitted the rosemary and squash and added a bit of something else and thickened the broth to compensate for the missing...oh never-mind. That's too much work to re-write a recipe. This just did not make the cut for us.

Honey Of An Oatmeal Bread

I made this exactly as written; but, I substituted 1tbs of low fat Country Crock for the oil. It turned out great! This is a fantastic low fat bread! We will be making this again and again and again.

Baked Teriyaki Chicken

Great! Will line the pan next time. I doubled the sauce and it was too much. I also used low sodium soy sauce and that worked just fine. We don't eat dark meat, so I used boneless skinless tenderloins and they were done in 30 minutes. It really would be great on a bone in chicken cut though. I used low sodium soy sauce too since we need to watch our salt intake. EDIT: Now that I have had a chance to eat a whole plate, OMG this is GOOD! We serve it over chicken flavored rice. I don't even like Chinese food that much and I love this.

Seasoned Turkey Burgers

Wow! These are great! I made exactly as directed. I skipped the optional egg and only had a 1.25lb package of extra lean turkey. The burgers turned out great!!!! All I know is I'm hooked!

Baked Potato Soup

I'm sorry. The basil really threw this dish off for us. I am a HUGE fan of fresh basil; but, the dried basil in this dish really threw it off for us. This just didn't make the cut for our family. I may try it again without the basil and see what happens.

This is a solid picnic recipe. I made this for a cookout and it was very good. Like other's I cut the suger in half; but, otherwise I followed the recipe and it was great. This will be my got to recipe for baked beans now.

Tasty Lentil Tacos

Wow! These really do taste almost like ground beef! The consistancy is a little different; but, I think this is as close as it gets for a low fat alternative and they are really good! My 9yr old loved them and there were no complaints at dinner. I used canned beans and put them in the crockpot; but, I think you could use canned beans on the stovetop for a faster cooking time as well.

Chicken Piccata with Artichoke Hearts

I'm sorry, this was not a hit with my family. Sadly I am allergic to sulfites, so I had to skip the wine and due to doctors orders I had to omit the butter. I suspect this dish would have been MUCH better with those ingredients. If you can't add those ingredients this may not be the recipe for you.
