Black Bean and Salsa Soup
This was fantastic considering how easy it was to make. The only thing is, it is kind of bland if you don't add any spices. I added 1/4 tsp salt, 1/4 tsp oregano, 1/8 tsp garlic powder, 1/8 tsp paprika, 1/4 tsp chili powder, 1/8 tsp black pepper. I also used chicken broth. I blended everything in the food processor and added 1 bay leaf to the pot before heating it on the stove. Just before serving we topped our soup with fresh lime juice, sour cream and fresh cilantro.

Amy's Cilantro Cream Sauce
This stuff is AMAZING! I have been dying to try this recipe for a while based on reviews and I am so glad I finally made it. At first I thought 1tsp of pepper was too much, so I initially made it with half the pepper. I tasted it and realized you need the full amount of pepper to balance out the celery salt. This is one of the few recipes on this website where I reccomend you change nothing! It is perfect as is. I served this as a dip with homemade salsa and tortilla chips; but, it would also be a good veggie dip and I think it would be awesome on chicken, steak or fish. It would be a great addition to a burrito or taco.

Maple-Brined Pork Loin
As others have said this is good enough to make for company. I did not have cracked pepper, so I subbed 3/4 tsp ground black pepper and that worked just fine in a pinch. I also skipped the ginger because I did not have any; but, I will be sure to add it next time. My 11yr old ate all of the food on his plate and made sure to verify that this dish woud be worked into our regular rotation of dinners! That makes it a keeper for me.
