High Temperature Eye-of-Round Roast

Turned out great!! Was surprised too by leaving the oven off for so was a little cool when I served it so next time, I think I'll warm it up before serving. I had a 4.65 lb. roast, preheatead oven to 500 and then cooked for 32 mins. on 475 and let sit for 2 1/2 hrs. in oven and 20 mins. out of the oven with foil over it. I do suggest making a gravy which I did have and made. Otherwise, I think it would have been a little dry. Made baked potatoes and broccoli and cheese with it. Yummy dinner and definitely a keeper!!!! Thanks for sharing!

Chicken Suiza Cornbread Bake

EXCELLENT!! Definitely making again! Small changes I made were can of fiesta whole kernel corn instead of regular...Used the Jiffy brand corn muffin mix cause it was the only one I could find that was 8.5 oz....added little bit of salsa and deleted mushrooms. Fed our family of 5 with left overs but all of them ate it up! Served with broccoli and cheese.

Spicy Maryland Crab Dip

If you're from Maryland...this is the BEST crab dip ever! I had lots of Old Bay and extra cheese! Serve with french bread or Town house crackers. I make it at our Annual Wine Fest in Md. and just made it again at Christmas....lots of compliments!!!

Potato Chip Chicken Casserole

This is really an awlsome "cold night" dinner! My whole family enjoyed this meal. I also doctored it up after reading that the org. recipe didn't have much flavor. I chopped my chicken up with a food chopper. The spices I used were a tiny bit of McCormicks Garlic with Extra Virgin Olive Oil, curry (since we are huge fans of curry powder), 1 sliced hard-boiled egg, salt and pepper. I also used 2 cans of the cream of chicken soup and added French Fried Onions on top along with the pot. chips and cheese. When it came out of the oven, it almost smelled like a crab dish! I also used the Rippled potatoe chips. We will definitely have this again....but not too often....very fattening but dee...lish!! Gotta try it! I will pass on to my other family members and friends! Thanks for the recipe!

Baked Seafood Au Gratin

Okay..what did I do wrong? It was horrible and I was really disappointed after spending so much money on it. I used the canned Phillips crabmeat and I also omitted the fish but followed the recipe exactly. I think the Cheese did not go well with the seafood combination. May have been better with a wine sauce instead. I also used the bags of Med. Frozen Shrimp so maybe I should have used all FRESH seafood instead?

Broccoli Chicken Casserole I

This was excellent! I used cooked egg noodles on bottom and changed the cream of mushroom soup to Cream of Chicken, Cream of Broccoli and Cream of Celery. I made this for a serving of 8 and used about 2 1/2 cans of soup. I think I should have used 3. I also would mix everything together except for the cheese and stuffing mix. Layering it, in my opinion, was a little dry but still yummy! I will definitely cook this again! My kids ate it which is impressive as they usually do not like chicken. Oh! I also used Cornbread Dry Stuffing Mix on top! Yummy!!
