Aunt Teen's Creamy Chocolate Fudge

This fudge set up beautifully for me with a wonderful rich flavor and perfect texture. Follow the recipe/directions as written and you should have no problems; super easy.

Boudreaux's Zydeco Stomp Gumbo

Made this last night and it was a big hit. I only made a couple slight changes: I used extra chicken and andouille sausage but no shrimp. Also I used two serrano chiles instead of the red and the spice/heat was perfect, but then again I like really spicy food. I also added a touch of file powder. I cooked the roux for about 25 minutes to get a rich color(used peanut instead of olive oil because that's how I was taught) Overall the flavor was perfect!

Red Velvet Cake IV

This was my first time for making red velvet cake. I followed the recipe exactly with the exception of using 4 Tbsp of cocoa powder as some previous reviewers suggested. I made cupcakes and adjusted baking time accordingly and they turned out perfect in flavor, density, and texture. I gave only 4 stars because I didn't use the icing called for so I can't comment, instead I used a simple but wonderful cream cheese icing recipe found on this site

Gourmet Mushroom Risotto

This was my first time making risotto and it turned out fabulous. The only alteration I made was to use a little less than half the mushrooms the recipe calls for. It's very easy, albeit time consuming but the result is worth every minute of stirring.

Blonde Brownies I

These are indeed very sweet, but I have a huge sweet tooth. I doubled the recipe with the exception of the salt. I used chopped pecans and also added toffee bits. I omitted the chocolate chips. Baked for 28 minutes and they came out perfect, nice and chewy but not gooey. Huge hit at my house.
