About this Cook
I cooked 5-7 nights a week for a family of 4 over 20 years. Now, with no children in the house and a new hubby that loves to try new things, I am having fun trying finding new recipes and converting old ones to feed fewer people.
My favorite things to cook
I still love to bake cookies. I don't make as many as I used to, or always bake completely from scratch, but there is nothing like the way the house smells when there are cookies in the oven.
My favorite family cooking traditions
The holidays were and are very important cooking events. From the prep work to carving the turkey, it was always fun to be a part of. Though, over the years, I have developed a preference to participate rather than lead the whole thing.
My cooking triumphs
I think any time a person can put a healthy meal on the table for your family, whether you spend 2 hours or 20 minutes, is a triumph. I am blessed for the years past and grateful to have many years to come.
My cooking tragedies
I'm sure there were a few, but thankfully I can't remember them.

Layered Chicken and Black Bean Enchilada Casserole
Everyone loved this. Even my picky eater ate leftovers. I did double the cumin and added a finely chopped white onion.

Oregon Salmon Patties
While my husband's review would have been a full 6 stars, I've only given it 4 because I made several changes based on the suggestions. I used leftover salmon we had had earlier in the week, added all of the cracker crumbs to the salmon and other ingredients, then added a 1/2 tsp of Old Bay in addition to the dry mustard. I made the patties and then refrigerated. I crushed the rest of the roll of Ritz crackers and used those to coat the patties. I then baked them at 475 for 8-10 minutes per side. I served with a cajun remoulade sauce that I found on another site. They were incredible. My husband said "You can't even tell these are leftovers. You could feed it to company." And then he went on to try and figure out when we could have them again. Lucky for him there are still leftovers!
