Cinnamon and Lime Chicken Fajitas

This is one of my regular recipes, definitely one I enjoy. As others have said, it is on the mild side but is easy to modify according taste. I usually use half a jalapeno for 2 servings and a whole lime (which also keeps the chicken moist). Sometimes I even add some cinnamon to the potatoes for more punch. The unusual (yet authentically Mexican) combination of flavors make this dish a nice twist on the same old fajitas.

Cinnamon-Glazed Sweet Potato and Apple Bake

I made this for Thanksgiving as a change from the usual sweet potato casserole, and everyone loved it, even those who weren't big fans of sweet potatoes. Sweet, but not too sweet. The apples add a nice touch of texture. Would definitely make again for the holidays!

Acorn Squash with Apple

I liked this. The apples and sugar added a nice sweetness to the squash, without being too sweet. The tip for peeling the squash was helpful as well, even though I'm not daunted by the skin myself. I somewhat prefer the flavor you get from traditional roasting, but if you want a quick and easy way to prepare squash, this is the one to try.

Cabbage Saute

Not bad, but a little bland. The butter and the carrots did add a touch of sweetness, but not enough to make it impressive. I'd probably try it again, albeit with a few modifications.

Herb Chicken with Mustard Sauce

The herbed crust for the chicken was excellent, very tasty! The sauce was also pretty good, although I would suggest halving the recipe; it was simply more sauce than was needed for the tasty chicken. I also added a bit of honey, which offset the strong flavor of the mustard.
