Any recipe with garlic in the title cannot be half-bad. This was yum and I make it often when I don't feel like coming up with something more creative.

Roomie and I enjoyed it, but I think I was more fascinated by how easy it was, as opposed to the overall flavor. I used a stove top grill pan, but will try a real grill next time.

Easy Eggplant Pita

Instead of mozzarella I used fat-free crumbled feta cheese and fat-free Ranch dressing. I also bought onion pitas. I think the feta really added flavor. My mom has to eat fat-free, cholesterol free now and has spent the last three months eating plain grilled chicken breasts and salad. This was a treat that made her smile.

Enjoyed it, but will use ricotta next time. I used ground turkey to make it a bit healthier. I like it meatier, so I used almost twice as much ground turkey as it called for.

Chicken Milano

The first time I made it, the sauce was too thick and didn't coat the pasta and chicken enough. Second time I saved more chicken broth for the end and ended up with much creamier sauce. This tastes very much like my favorite dish at Olive Garden. Great dish for company or a romantic dinner for two.

Kickin' London Broil with Bleu Cheese Butter

While I love bleu cheese, I felt in this recipie it somewhat took away from the taste of the meat. I like my London Broil really rare and can usually eat half of one myself. The bleu cheese butter was too heavy and I stopped usuing it after a few pieces.

Laura's Quick Slow Cooker Turkey Chili

This was quite good. I didn't miss the ground beef, like I normally do in a ground turkey recipe. Just enough spice for my sensitive tounge. I didn't have red pepper flakes, so I used ground cayenne pepper instead.

Molten Chocolate Cakes With Sugar-Coated Raspberries

Holy cow! Amazing. My roomie and I have always been fans of the motlen chocolate cake and Chili's, but I think we like this version even better. It's nice to make a quick indulgent dessert for just the two of us, without having leftovers to tempt us for a week. It's a great dessert to make for company - looks restaurant fancy, but is easier than chocoloate chip cookies. Will try making it in the ramekins next time.

I made this for the second time last night; this time I made it with extra sharp cheddar. It was just what it needed to make it cheesy enough for me. Enjoyed it with BLTs and a tall glass of iced tea. Yum.

Double Tomato Bruschetta

A nice change from a traditional bruschetta. I actually prefer to use dried basil instead of fresh. I think the flavor is more evenly spread. Use your kitchen shears for cutting those sun-dried tomatoes. Sometimes this ends up a bit soggy, but it is always a crowd-pleaser.

Garlic-Lemon Double Stuffed Chicken

I was skeptical about using cream cheese, but this turned out really well. I used low-fat cheddar cheese, cream cheese, romano cheese, and skim milk to push it a bit more to the healthy side.
