Wrapped Salmon

Simple, easy and fast. Delicious, tucked some fresh asparagus tips in with the fish, they were al dente when finished. Squished fresh lemon over when done. Served with some brown rice and steamed sugar snap peas. Instead of butter, I used spray coconut oil, healthier option as am fighting high cholesterol...delicious! You could easily serve this to guests and they'd be super impressed!

Tropical Salad with Pineapple Vinaigrette

Delicious surprise! had two pineapples to use up, so tried this. Used slivered almonds instead of macadamias and toasted them along with coconut. Forgot to put the bacon in...think we liked it better without! it was fresh and woke up the taste buds! delicious and will be baking it again....tonight!

Gourmet Mushroom Risotto

Dinner last night....yummy! am vegetarian so served a salad before hand of steamed mini zucchini's and shallots, palm hearts,cucumber and lettuce. WOW! this is time consuming, but well worth the effort! used tips from many reviews, added a clove of local garlic (never use Chinese anymore) upped wine to one cup so broth went down to 5-1/2 cups...used organic chicken broth (not a die hard vegetarian, just don't eat meats) used 1/2 pkg of Costco mini bella sliced 'shrooms along with two kinds of pleurottes 'shrooms....fresh parm and garden chives! wow was this good, but very filling! going to try pacegirls recipe for leftovers Risotto al Salto....sounds to good to be true! tres Italiano! thanks for sharing!

Bircher Muesli (Swiss Oatmeal)

Just made this and used organic whole oats (others are gmo's) greek 2% yogurt (cause that's what I have) agave syrup (healthy spoonful) currants instead of raisins, and instead of brown sugar another healthy spoonful of real maple syrup. Used 1% milk and in hindsight should have tried almond milk, which I have more of ... now have just enough for a cup of tea in the morning! while I sink my teeth into this delightful looking dish! if I remember, I'll be back to give my two cents on the tastes! (edit* just threw in some flax seed, cause they were sitting here staring at me) It's now morning....drinking a big cupof hot tea and this is fabulous! the flax adds a little je ne sais quoi ? yummmm will be making this a regular!

Triple the Ginger Cookies

Added glace ginger, candied ginger, ground ginger and.... the zest of a lemon... oh my gosh are these ever good... not if you don't like ginger though... or shouldn't that go without saying?? They are super easy to make and I've rolled them into logs in wax paper and am leaving them in fridge for baking on demand. *****

Banana Loaf

So easy and soooo good! used margarine as butter was frozen, use cuisinart with plastic blade and this time added dried cranberries and almonds and walnuts, put half batter into tin, put layer of chocolate chips then rest of batter.....heavenly actually!

Simple White Cake

Easy peasy and oh so good. Added extra water as per suggestions. Extra vanilla too and threw in chopped fresh mcintosh apples and made it in a flan pan so put walnuts, raisins and dried cranberries on top then sprinkled with icing sugar... the reviews were GREAT! and we usually throw away cake as we're not really cake eaters.

Mulligatawny Soup I

Absolutely delicious. I added a tin of coconut cream instead of the heavy cream, not even sure why, think I read it somewhere in another recipe. It was so delicious I could have made gallons! everyone at the dinner raved! it IS very heavy so you don't need to eat alot. Will make again and again!

Chicken Pot Pie IX

I always hesitate to make pot pies as they're too much work. This is really easy, I had cooked an extra chicken (in the oven) a couple of days ago, deboned it, and followed the recipe. I actually doubled it as I also cooked a package of thighs in the oven today. Chopped it all up, cooked the veggies in micro and some in pot, mixed chicken and vegs all together in a big bowl and made 1 huge, family size pie and one that fed four of us (adults) with a salad on the side. I must admit, I tweaked it with some patak's mild curry and a little powder curry, hadn't read any reviews so just did my own thing. I was delicious and we're looking forward to the big one I froze. Oh and I used a puff pastry (ready made) frozen one, rolled thin and it puffs up :) didn't make a base, just put it on top...

Elk Steak Marinade

Made this for dh last night, he loved it! also the elk which was a medallion so not too much. It marinated for only about 45 minutes then I fried it in a cast iron hot frying pan....2 mins on one side and about 3 on other..perfectly pink inside and really tender! his first time eating elk, but not the last! (I'm a vegetarian :-)

Parmesan Sage Pork Chops

we're standing here waiting for them to come out of the oven. My hubbie is salivating...saying "if they taste anything like they smell !!" so easy, fast and ..... delicious?? made exactly as the recipe says but only had boneless pork chops..so used those MMMmmm now we've eaten, hubby says 6/5....he doesn't usually say alot about food, this however got his attention...who woulda thunk? pork chops? they end up moist and oh so so so tasty with the crunchy cheesy crust. Do it.

Foil-Baked Chicken

I'm not sure how I found this, but needed a quick recipe for thighs. I added a tiny bit of rice vinegar and no sugar..no cilantro (didn't have any)no Kikkoman, used another kind. Result? my husband said, mid bite: 'what kind of chicken is this?" me: "thighs" he: "this is the BEST I've ever eaten" . He's 62 and I'm a cook....so easy it's ridiculous and no mess, baked in foil! YEAH !! try this you'll love it.

Chili Rubbed Pork Tenderloin With Apricot Ginger Glaze

4* - so easy to make, just have to have ingredients on hand. We were missing bbq sauce, used sambal asli (asian hot sauce) instead along with apricot jam (heated up) with cilantro, lime juice, garlic powder, fresh grated ginger. Didn't have time to let the spice sit, so just seared it straight away and it was fantastic! seared in a pan on high and then put into the oven at 350 F for 20 minutes......perfection. Served with bok choy/red onion/red pepper/celery and garlic stir fry and oven roasted/fried potatoes (as per someone's suggestion)

Pan-Poached Alaskan Salmon Piccata

Good healthy dish. I think I added too many capers, would go easy on them next time. I looked to see if anyone had added any fresh dill and couldn't see any results. I decided not to add any .. this time. Think I will next time instead of the fresh parsley. I liked this, but well, maybe it was the salmon I used, but I wasn't crazy about it. It is however an incredibly easy recipe and results are good.

The Best Banana Bread

Delicious, added toasted slivered almonds and walnuts then made it again two days later since we ate it all and added the nuts plus some dried cranberries......it is quite delicious. Oh and to be healthy I added 1/3 cup of apple sauce instead of butter or oil......oh so good!
