I tried this recipe a couple weeks ago and it made some of the best muffins I've ever had. I like being able to control the ingredients, so these make a great alternative to stopping at the coffee shop before work (the recipe makes 6 jumbo muffins). I know several people have used oil, but these are just delicious with melted butter, and they come out without sticking to the pan at all, very moist.
A note about sinking muffins:
The first time I made this, I used two pans. The oven accidentally got turned off for a few minutes, so the second pan was in for a longer time at a lower temperature. These muffins were the ones that sank. I would suggest upping the temperature a few degrees to decrease the baking time. That should eliminate the problem.
