Homemade Pancake Mix

This mix is a hit with my family. I would suggest starting with a smaller amount of milk and working your way up, since everyone likes their pancakes to a different consistency. One variation we have done is using pie spices to change it up.

Irish Cream Chocolate Cheesecake

This came out absolutely delicious! I used Pepperidge Farms Chocolate Chessmen for the crust, and I also added some crushed thin mints on top of the finished cake for garnish. To bring out the minty side of things, I might add a touch of mint extract next time, but everything is great as is!

Banana Crumb Muffins

I tried this recipe a couple weeks ago and it made some of the best muffins I've ever had. I like being able to control the ingredients, so these make a great alternative to stopping at the coffee shop before work (the recipe makes 6 jumbo muffins). I know several people have used oil, but these are just delicious with melted butter, and they come out without sticking to the pan at all, very moist. A note about sinking muffins: The first time I made this, I used two pans. The oven accidentally got turned off for a few minutes, so the second pan was in for a longer time at a lower temperature. These muffins were the ones that sank. I would suggest upping the temperature a few degrees to decrease the baking time. That should eliminate the problem.

Angel Food Cake I

I used this recipe to make cupcakes for an impromptu party yesterday, and they came out very nicely. The key to this cake is to keep an eye on it and keep checking it so it is not under- or over-cooked. If a toothpick inserted in the top comes out clean, the cake is perfectly done. Everyone especially like the almond flavor that was added to this simple cake.

Grandma's Gingersnap Cookies

Amazing - my new favorite cookie! I always loved gingersnaps when I was a kid, but I haven't bought store ones in a while. When I was looking for different kinds of cookies to bake for the family for Christmas, I saw these and tried them. They came out absoultely perfect, and I'm sure I'll make them all the time now!

Classic Peanut Butter Cookies

These cookies were delicious! I did have a problem with how fast the bottoms browned, but I think it would be perfect if the temperature was 15 or 30 degrees lower.

The Best Rolled Sugar Cookies

When I made these they came out kind of dry and tasted terrbile by themselves. But when I added butter frosting, it complemented them really well and it became a great cookie!

Beer Batter Fish Made Great

Good. I laid the fish in flour before dipping it in the batter, and that turned out better than putting it straight in the batter. It needed a little more spice, but it was good.
