Chicken Breasts with Lime Sauce

Reviewed: Mar. 23, 2010
left out the dill weed, i hate the stuff. Hubby said "it tastes like cracker barrel catfish" and gives it 3.75 stars. 7yr old son said "it's a little bitter at first, then it tastes like stale gum", and gave it 4.5 stars. Mom (I) said, "well, it was easy to cook, and it had a nice little zest to it" and gives it 4 starts...but will likely not make it again. I took the advice of others, and halved the butter and threw a healthy swig of white wine in it's place. I also threw a little flour in to thicken the sauce a little.

Guinness® Corned Beef

Reviewed: Mar. 19, 2010
I hate corned beef. My husband wanted some for St patty's day. The store must have been sold out of Guinness and Murphey's, so i just picked Honey Brown....using brown sugar, honey brown sounds good..I smothered brown sugar on, threw it in the crock pot, poured enough beer to cover it completely, and left for work. It smelled soooooo good, I couldn't wait to try it. Well, it was actually ok...I still hate corned beef, so I had to refer to my hubby for an honest review. He said it was good (wanted the leftovers), but said that it could be tweeked, he just wasn't sure how. I might still try it next year...I'll just have to get to the store sooner...small update, hubby made a sandwich with the leftovers the next day....couldn't stop talking about how "AWESOME" it was....we saved leftovers soaking in some of the "au jus", fyi

Diane's Colcannon

Reviewed: Mar. 19, 2010
well, it was pretty good, followed directions exactly. I'd actually rate it a 3.5, but i rounded up to be nice. Worth the try for St Pattys day, but I likely won't make it again....may not be recipe's fault, just not my thing

Best Ever Banana Bread

Reviewed: Mar. 3, 2010
Well, I liked it... a lot, but I'm only giving it a four, cause next time, I will look for a diff recipe. I added 1 tsp vanilla, and 1 tsp cinnamon, as well as did the whole 1 cup white 1/2 cup brown sugar. Loved the texture (crunchy outside, soft inside), but something was missing. Worth a try for sure

Pierogi (Polish Dumplings)

Reviewed: Feb. 28, 2010
Yummy....sooo much better than store bought...but definately more time consuming. I made the dough as is, probably added 3Tbsp of flour while kneeding, which took maybe 20 minutes. Didn't make the sauerkraut cause hubby was having tummy problems and that irratates it (tmi, i know). As far as the potato filling, I used a bag of instant mashed potatoes (four cheese), added some cheddar/jack cheese, sauteed onions, some garlic, and a little bit of cooked bacon. Made approx 33 dumplings, froze on a wax paper lined cookie sheet for about 1hr. Boiled half in salted water for about 5 minutes (put away other half for later date), then of course you MUST saute with butter an onions. Top with sour cream...yum, Yum, YUMMY!

Simple Caramel Apple Pork Chops

Reviewed: Feb. 25, 2010
Pretty darn good. Nice change of pace from normal pork chops. I used one, small granny smith apple, 3 chops (that's what was in the package), and doubled the sauce. I forgot the pecans, they would have been nice, but I don't think it really mattered. It was good, comforting, and really, really easy to make.

Classic Waffles

Reviewed: Feb. 9, 2010
Based on other reviews, I made the following changes: 1/2 tsp salt, 4 TBSP sugar, 2 Tsp Vanilla, and approx 1/2 tsp cinnamon. I also separated the eggs, whipped the whites, and added the whipped whites last. YUMMY. It made 5 waffles. Smelled great, tasted great...just all kinds of yummy-lisciousness

Slow Cooker Buffalo Chicken Sandwiches

Reviewed: Feb. 9, 2010
Well, too spicy for me. I tried to tone it down by using my sisters yummy recipe for wing sauce (you'll have to look at my reviews, it's not published yet..."best wild wings sauce" by hockeymom089, basically adding sour cream, mayo, and lemon juice. The chicken was nice and tender, the flavor was great, but the afterkick was a bit too much for me..maybe because it was marinated in the sauce. If you like spicy, try it

Almond Crusted Pork with Apple-Rosemary Sauce

Reviewed: Jan. 30, 2010
made as written. asked the hubby what he thought. He didn't like the apples or the sauce, but the pork was good....then he said, but I didn't like the crust on the pork..so next time you can take that off...in other words, he liked the pork only, and nothing else. i thought it was ok, but not real great. sorry, won't be making this again.

Marinade for Chicken

Reviewed: Jan. 21, 2010
Well, it was definately flavorful. I planned on marinating for 5 hours, but plans changed, and I ended up letting it marinate overnight. I'm not sure if that was the problem, or what. There was too much salt. There's plenty of salt in the soy sauce, so I recommend omitting the extra tsp of salt altogether. I made it as it, and it was a LOT of marinade. I had 4 chicken breasts and could have easily halved the recipe and still had plenty. The flavor was almost too strong, so I don't recommend a overnight soaking. Not overly impressed though.

Baked Pork Chops I

Reviewed: Jan. 19, 2010
looked great, smelled yummy, very mixed reviews from the family. Hubby: "I just can't get over how tender these are..wow!" (throughuot entire dinner). He said 4.5 stars. 7yr old son: mom, can I have more? (fyi, he NEVER asks for more of any kind of meat). He said he would give it a 5...even asked if we had leftovers the next day...has never asked for leftovers...ever..not even mac and cheese leftovers. What did I think? blah, yucky, didn't even finish mine. If it was up to me, I'd give it 1 star and never make it again, but it seems that my boys think differently.

Garlic Prime Rib

Reviewed: Jan. 12, 2010
Super easy, and very good. My first prime rib..the directions didn't say to put in oven covered or uncovered (my first time remember), so I guessed and left it uncovered. cooked @ 450 for first 30 minutes, then 19min a lb @ 325...perfect. Used half the salt because my M-I-L has to watch her salt, and you would never had known.

Ham 'n' Swiss Rolls

Reviewed: Jan. 5, 2010
Only OK. I didn't have any onion, but I don't think that would make a big difference. I made these for dinner to go with the biscuits and gravy my husband was craving (lots of carbs, I know, I know), he ate 4 of these with the gravy on it instead of the biscuits. so maybe if I make these again, I will serve w/sausage gravy

Beer Rolls

Reviewed: Jan. 1, 2010
Easy & yummy, my two favorite things....I only have bud light in my house, and I only had one tablespoon of honey left. I will definately make these again (even though my sisters recipe for rolls is better than this one...still great)
