Vegetarian Tortilla Soup

I love this recipe. It works great in the crock pot as well. I did decrease the green chiles and used 2 cans and less cumin. I also used frozen corn and fresh peppers and onions. I add soaked black beans in the crock pot so they cook all day. It adds a bit of protein. I am vegan so no cheese but I love this! It is very popular with friends and family!

Singapore Noodles

I also used low sodium chicken broth and varied the meats...used squid instead of shrimp. I lightened up on the curry a bit and used rice noodles to keep it gluten free as well as more authentic.

Grandma's Strawberry Milkshake

I used the basic recipe but used fat free milk and some splenda instead of the honey to make it less calories but still had the great taste......

Skiers' French Toast

This recipe was a 'hit' at school for our teacher's breakfast. The second time I made it, I was more careful with the syrup mixture to make sure it didn't boil and that way it didn't get so hard and chewy. I sprayed my glass dish with pam and it did not stick. I also added a dash or two of cinnamon to the egg mixture and it was excellent. Definitely a quick and easy dish to make and very easy to increase or decrease the size!!
