Slow Cooker Latin Chicken

Yum! Served over white rice, topped with chopped avocado. I used bone in thighs and let it cook all day. Delicious!

Layered Salad

I made this to go along with Easter dinner. I was excellent! I did swap out the water chesnuts for celery, but otherwise I made it as written. I was unsure about the mayo layer, but once served the flavors came together very well. I would make this again!

Caribbean Grilled Crab Cakes

The crab cakes were ok, but nothing in the ingredients made them "Caribbean" in my opinion. I used panko breadcrumbs, one can of crabmeat and one can of claw meat. I let the crab mix chill in the fridge while I made the salsa which definitely helped keep the patties together when I sauteed them.

Beef Barley Lentil Soup

I omitted the potatoes since the barley and lentils contribute so much starch. I also used stew meat instead of ground beef. All in all it was pretty good. Next time I think I'd use either just lentils of just barley, since the textures of both grains were so different. I was a good recipe to use up lots of stuff in the pantry though!

WOW! I didn't think anyone else knew about this, nor called it the same thing we do! My italian grandmother made this for us every Christmas. We dip slices of fennel bulb in this or if fennel is not available, celery.

African Sweet Potato and Peanut Soup

I used 1 can of diced tomatoes in place of the fresh, and adjusted the spices to taste. I used natural peanut butter, and I think if you are looking for "sweet", you should used regular. I reserved some of the peanuts to use as topping, which added a nice crunch. The cilantro really made a difference in the over flavor of the soup. I would make this again.

Carib Black Bean Soup

This one is a keeper. I saved some beans and vegetables, but pureed most of the soup. The consistency was excellent, almost creamy. I skipped the soy sauce since I used canned beans and they have plenty of salt.

Blue Cheese, Bacon and Chive Stuffed Pork Chops

Per one of the suggestions I added some pecans and one chopped granny smith apple to the filling. I also added a few tablespoons of cream cheese to help the filling stick together. I grilled the pork chops for about 7 minutes each side over medium high direct heat instead of baking. They were really well received. I served them with roasted garlic mashed potatoes. I would make these again, its a 'guest worthy' recipe.
