My Chicken Pho Recipe

I've been trying to duplicate an Asian soup recipe they serve in the Employee Dining Room at work, and this did the trick. I added celery and carrots to the soup, floated a star anise in it briefly (too long makes the anise flavor too strong), and added some sliced fresh shiitake mushrooms. I served the green onions and the bean sprouts as a garnish instead of simmering them in the soup to retain their crispness. This was very good and my husband raved about it. White Chocolate Orange Cookies

This recipe was recommended to me by another AR member and very good friend, Kez, and I'm so glad I tried them. I didn't mess with the recipe at all and they came out great! These were a big hit when I took them into work along with some other baked goods. Thank you so much for the recipe, Jennifer.

Lemon-Maple Butternut Squash

I bought a butternut squash on a whim and then it sat on the kitchen counter for a while whilst I wondered what to do with it. I found this recipe and boy, I'm glad I did. I used sugar free maple syrup, but that's the only change I made and it wasn't a big one. I couldn't stay away from this stuff. I know I had at least three helpings. Thanks so very much for the post. Now I'm not afraid of squash any more. Great recipe!

Boardwalk Quality Maple Walnut Fudge

One teaspoon of maple extract didn't really make this as mapley as I wanted, so I added another. That still didn't do the trick, so I squirted in some sugar free maple syrup and that did it. I cut this into very small pieces and took it to work with some other treats. Everyone loved it and I was asked for the recipe several times. Thanks so much for the recipe, SHORECOOK!

Cherry Balsamic Short Ribs

I found some discounted short ribs at my favorite supermarket and was looking for a recipe that didn't involve tomatoes. This was fabulous! I followed the advise of another reviewer and used a jar of Trader Joe's morello cherries with their juice instead of the cherry cola and frozen cherries. I also left out the rosemary (I can't stand it) and the fennel. Also beef demi-glace is very difficult to find and when one does find it, it is very expensive. I just used a can of beef consume which I reduced and that seemed to work fine. I couldn't bring myself to discard the vegetable and cherry solids. Why spend the money on the cherries just to throw them away? So I served them on the side. This was an incredible dish and my husband and I finished every scrap. German Lentil Soup

As almost every other reviewer mentioned, this needed a great deal of additional liquid. I used the stovetop method mentioned in the footnotes. I have to admit I didn't really care for this soup, but DH thought it was good. I was hesitant to add the nutmeg, but I wanted to follow the recipe as written. I should have left the nutmeg out. Even though it was just a small amount, I didn't like the way it blended with the other spices especially the caraway. I don't think I'd make this again. Sorry

Cranberry Sweet Potato Bake

This was wonderful! I must have cooked my sweet potatoes too long because they wouldn't hold together to cut into chunks. So I just used a big spoon and scraped them out of the skins. Other than that, I followed the recipe. Oh, I didn't have any granola, so I used chopped toasted pecans as a topping. I kept going back to for more until I polished off the whole dish! DH got one helping. This was really, really good. Thanks Patricia!

Easy Lemon Cookies

These were pretty good. I used lemon juice and lemon zest instead of extract because I think the extract has a chemical taste. I also didn't have any problems with the dough. I just dropped spoonfuls of it into the powdered sugar and kind of tossed it around forming it into a ball as I went. The cookies came out very cakey and not very crisp, but I took them to work along with some other baked goods and my boss raved about them. Thanks for the post Lissa!

True Bangers and Mash with Onion Gravy

I'm afraid that the way I made this wasn't exactly traditional, but I had to use what I had and stick to my low-carb diet. I used whipped cauliflower instead of potatoes and butter-flavored pan spray for the mash, but did add the mustard. Also I used fresh chicken sausage instead of pork. Even with the changes this came out great. I can't wait to get skinny and make it the way it's written. I just returned from England and didn't meet a sausage I didn't like. Hence the return to the diet. This was an excellent recipe, thanks for the post.

Slow Cooker Oats

I get home from work at around 2 in the morning and always check AR for the newest reviews. I saw this recipe and thought it would be great to wake up at 10:30 and have breakfast made. I had all the ingredients, so I tossed this together in the crockpot. When I got up, this was cooked perfectly. It did need some salt; since the recipe didn't call for it, I didn't put any in at the beginning. My husband added more brown sugar and raisins to his, but I ate mine just the way it came out (except for adding salt). Very good recipe. Perfect for work nights. Thanks, brandysue!

Left Bank Apple Salad

For some reason, I just dread cutting grapes in half, so it took me awhile to muster up the energy to make this. I followed the recipe exactly and it was quite good. The only thing is; I'm not sure about the celery. I don't think it goes well with the rest of the ingredients. When I make this again, I think I'll leave out the celery and add dried cranberries or something instead. Other than not caring for the celery, I enjoyed the salad. Thanks for the recipe!

Corn and Rice Medley

This was a quick and easy side dish. I used brown rice instead of white and since I don't care for mint in savory dishes, I used fresh parsley instead. I also added some garlic. Thanks so much for the recipe!

Rachel's Turkey Loaf

When my daughter was small (she's 30 now) I was cooking some ground turkey and she came into the kitchen and asked me what I was cooking because it smelled like Joey (Joey was the dog). I've never cooked ground turkey since. Instead, whenever a recipe calls for it, I substutute ground chicken breast which I did here as well. I used 8 oz of chopped mushrooms and sauted them before adding them to the meat mixture. I also didn't have any Italian seasoned breadcrumbs, so I used Panko instead. I also added a bit of sriracha to the meat mixture and to the glaze along with a bit of ground coriander (to the glaze only). This came out great! Nice and firm and not mushy at all. I think the next time I make it, I will leave out the barbeque sauce because we thought it kind of overpowered the other flavors and use some mustard and brown sugar in its place. Easy Egg White Omelet

How lovely to be able to make an omelet in the microwave! I increased the vegetables a bit and sauted them in a pan-sprayed skillet before putting them in the glass loaf dish. I know, I just made more work for myself, but I like the browned flavor. Also, the Egg Beaters are kind of expensive, so I just separated a dozen eggs, which I think made about the same volume. Now I just need to figure out what to do with the yolks. Anyway, it seemed to work just fine. I also added a sprinkle of granulated garlic to the eggs along with a splash of hot sauce. I loved cooking the omelet this way. Thanks so much for the recipe, DONNA!

simplylo's Oven-Baked Sesame Chicken

I made this last night for dinner and it was delicious! I used bone-in chicken thighs from which I removed the skin (I hated to do it, I love chicken with skin, but I'm on a weight loss program). I didn't have any Italian seasoned bread crumbs so I used Panko and added dried oregano, basil and thyme. At first I was hesitant to add Italian seasoning to an Asiany dish, but I was pleasantly surprised. I didn't discard the marinade, I boiled it down to a syrupy consistancy and served it over leftover Asian noodles with green onions. This was really wonderful and I can't wait to try it with skin-on chicken once I get skinny. Thanks so much, simplylo!

Chicken Marsala

I usually use a recipe from America's Test Kitchen for Chicken Marsala, but it is complicated and time consuming so I thought I'd give this a try. While it was good, it didn't have the depth of flavor of my usual recipe. This is good for the family, but for guests I'll stick with ATK. Thanks for the recipe!

Scalloped Potatoes and Onions

We just loved these potatoes! I used white whole wheat flour from Trader Joe's and reduced fat mayo and added a bit of garlic, but otherwise followed the recipe exactly. So great to find a scalloped potato recipe without cheese. Thanks so much!

Blister Beans

I had to cut this recipe in half to serve just my husband and I for dinner. Also, I used ranch-style beans with jalapeno instead of the black beans and black-eyed peas because that's all I had. We enjoyed these very much, they were well flavored and spicy, just the way we like our beans. I made this as a side dish for a chile rellenos dish from this site, and dinner was wonderful! Thanks so much.

Spicy Refrigerator Dill Pickles

A friend at work bought me in some spicy pickles he got at Whole Foods. I was wanting to duplicate them and found this recipe. I had to use one big pickle jar I had hanging around instead of the three small ones so I had to double the brine to fill it up. I just love the way these came out! They don't taste like the Whole Foods pickles, but they are great on their own. Next time I'm going to reduce the vinegar and increase the sweetner (I used Splenda instead of sugar) and the red pepper flakes which I think will be closer to the pickles my friend brought in. I want to surprise him with some less expensive homemade pickles, but truly I am very pleased with these. Thank you so much for the post!
