Baked Kale Chips

My family loves kale chips and eats them all up. They taste like roasted seaweed, which I love but I'm allergic to. I've been making various versions of kale chips for several years now but this was the first time I made them using parchment paper. The paper keeps them from burning up too quickly. Thanks!

Alfredo Sauce

My family loves this alfredo sauce recipe! I substituted whole milk and about 7 ozs. of cream cheese for heavy cream because I had none on hand. Also used less parmesan cheese added a bit of dry sherry. So easy and delicious. I'll definitely make it again.

Best Spanish Rice

Fried Rice Restaurant Style

I grew up in Vietnam and my mom made fried rice a lot when I was a kid. Fried rice is an easy breakfast dish made from leftovers for us. We used leftover rice (best when it's cold, just out of the fridge), leftover meat or ham (diced), scallions or garlic, veggies (peas and carrots work fine), eggs, and seasoned with soy, fish, or oyster sauce. This is a good recipe but you can make it even easier by cooking more rice than you need the day(s) before. I use this basic recipe to make fried rice for my kids now.

Simple Savory Pork Roast

Delicious and super easy. I drizzled it with a tablespoon of olive oil before sprinkling the seasonings on it. At 145F, it was still too pink for pork IMO so I cooked it to 160. Served it sliced, ladled the pan drippings over it. Wonderful.

Taco Seasoning I

Great recipe. I had to stop using commercial seasoning because they all contained whey and I have a milk allergy (in addition to gluten allergy). I used 2 Tbsp of seasoning per pound of meat and added some potato starch to thicken.
