Mashed Sweet Potatoes

Lentil Cakes (Patties)

These were perfect substitutes for hamburgers! I left out the bread crumbs because I didn't have any, but these lentil patties were still lovely. They were somewhat crumbly, so I think next time I will put all the ingredients in a blender so they really mix into one.

Chocolate Bread

This was delicious! I couldn't stop eating it! I did change it around a little by putting in two tablespoons of molassas. It was perfectly sweet. It's nothing like's bread, so you can't expect it to be oozing with flavour. Definitely a new favourite!

Tilapia with Tomatoes, Black Olives and Corn

I blended the tomatoes, corn, and olives with red wine vinaigrette (instead of white wine) into a thick purée, and used that as the sauce. I followed the recipe exactly from there, except to top it with basil as a garnish. It was the best meal I've had in weeks! No fishy taste, just a Mexican-like flavor that was perfectly zesty!

Oatmeal Whole Wheat Quick Bread

This was quick, easy, and just what I was craving. I added about a 1/2 cup of extra flour and an extra tbsp of honey and then baked it in a loaf pan. It turned out just like store-bought bread, except I knew it was free of high fructose corn syrup and additives! The only thing I will do differently next time is to double the recipe to have a full loaf.

Real Hummus

I replaced the salt with just a dash of basil and added an extra clove of garlic and it was delicious. It's really great used as a dip for raw vegetables, especially carrots and celery.
