Oregon Salmon Patties

Reviewed: Nov. 15, 2011
My family loved these! Even my mother in law liked them and she doesn't care for salmon. I did add garlic when cooking the onions and added all the bread crumbs and didnt coat them. I also added 2 tbsp of lemon juice and 1 tsp of dill and didn't add the juice from the salmon. Then I baked them in lightly oiled (with olive oil not shortening) muffin tins at 425 for 15 minutes or until they brown and reach 160. Easy! Will definitely make these again.

Chocolate Chip Banana Bread II

Reviewed: Oct. 15, 2010
This is an amazing recipe. I have made the bread several times now and other reviewers suggested butter and my family all voted that the butter batches were the best. Also just made this recipe into muffins for my daughter's girl guide fair and they turned out amazing. Made about 20 muffins and they baked for about 24 minutes. Now I just have to keep them from getting eaten before the fair. =)

Hawaiian Chicken Salad

Made it for my daughter's luau birthday party and everyone loved it. Caught my husband in the fridge with a spoon many times. No leftovers for this dish. I wasn''t sure about the chicken and grapes but the flavors were great together.

Bran Flax Muffins

This recipe is AWESOME!!! I did substitute the sugar for 3/4 cup of honey because my daughter has problems with sugar but they were still sweet and very moist. They disappeared pretty quickly....Great recipe. I can't wait to try is with zucchini and other items as other reviewers have done. It will be a great base recipe for ANYTHING!

This recipe was a huge hit for a sushi party I threw recently. I did double the sauce as I found it a little light. Very tasty and is now added to my recipe box as a favorite. Thanks!

Greek Steffotto

Reviewed: Sep. 30, 2006
I thought this was good but my husband didn't really like the clover and cinnamon flavour of which I only added what was in the recipe. My daughter ate it but she didn't rave about it so I may try it next time without the clove and cinnamon. Will keep you posted.

Had this for dinner tonight and my family loved it. I didn't add as much dressing and added cucumber as well. Just the same it was very nice and healthy!

Chicken Tortilla Soup I

Reviewed: Sep. 30, 2006
This recipe was tasty and had a lot of flavour although I did have a lot of trouble finding horminy and canned green chilli peppers so I left them out. I did find hominy styled corn which was just bigger kernels of corn (didn't really like this style of corn) and I used jalepenos instead of chilli peppers. I didn't find it as think as everyone else reviewed but perhaps this is due to the lack of horminy. I will make it again once I find these other ingredients. There is only so much time you can spend in a grocery store and the grocery clerk were all baffled too. =)

Excellent flavour and very easy. My 5 year old daughter loved the goat cheese and my husband gave it a 5 star! I did add some cucumber and tomates as my family loves their veggies.

Baked Salmon II

Reviewed: Sep. 30, 2006
Excellent flavour! I thought the cooking time for salmon seemed long so I only put it in for 30 minutes but in hind sight I think the full 45 minutes was required as the centre was a little too pink. It must be because it is wrapped. My family loved it and even my 5 year old ate it. Husband gave it a 5!

Nostalgic Apple Pie

This pie was a hit! My father-in-law who is diabetic loved it. Even my mother-in-law who is a cook and owned her own restaurant said that the aftertaste was minimal and she wanted the recipe which says a lot!

Val and Jess's Vegan Avocado Dip

Reviewed: May 7, 2005
Just made this recipe and didn't add the cilantro at first because my husband doesn't particularly like that spice but in the end the recipe really needed it. We ended up adding an extra tablespoon of cilantro and my husband tossed in a bit of garlic. This gave it a bit more flavour because we were finding it a little bland. I really like it but my husband isn't crazy about it.
