Waikiki Meatballs

Easy, but only 4 stars for taste. The sauce was tangy and sweet, but the meatballs were fairly bland. The ginger added a nice dimension but was not enough to save the meatballs from mediocrity.

Fried Plantains

Pat's Baked Beans

I used dried beans (soaked overnight and cooked about four hours) which ended up a little "al dente", but the flavor of these beans really was the best I have tasted in a while! If you plan on using dried beans, I would start them the night before you plan on serving them. I'll be making these again!

Grandma's Peanut Butter Fudge

It is very likely that my lack of success in attempting to make this yummy-sounding fudge is due to my lack of fudge experience, but I had the same sludgy, grainy slop after boiling. I may try again, since I hear that fudge can be tough to get right!

Apple Crumble Tart

While immensely nice to look at, I found this tart to be merely good, not that great. I used brown sugar in the topping but it was not as flavorful as I had hoped for; a bit of nutmeg may have helped that. I created a lip of crust around the edges, which were golden and tasty, but the center was fairly undercooked. Be sure not to pile your apples up too high in the middle; spread them nice and evenly around the tart. I would even bake it a bit longer to finish the underside of the crust. We also skipped the sauce and used caramel and whipped cream instead. A good recipe for a quick, easy dessert when you have too many apples!

Potato Leek Soup III

Yum, yum! I also halved the butter and cream, and used flour instead of corn starch. Creamy, rich flavor. I will use this recipe again! P.S. - We had roasted cauliflower for dinner at the same time as this soup and my husband discovered that dipping his cauliflower in the soup was great too. Next time I make this, I may very well add some roasted cauliflower after pureeing.

Spicy Garlic Lime Chicken

The sauce described in the recipe was almost non-existent, so I did a quick pan sauce by sauteing some red onions and deglazing with more lime juice. I topped it with fresh cilantro. This chicken was fresh tasting and moist and my pan sauce added some extra zing to an otherwise good recipe.

Caribbean Sweet Potato Salad

We made this salad without the sweet potatoes for our guests, but even without it was great. The cucumbers add a nice cool crunch to the salad and the dressing is yummy! Next time we make it, I'll make sure to include the sweet potatoes...delish!

Purple Apple Slaw

This slaw is not only easy, it's delicious and a refreshing take on the traditional coleslaw. Make sure to choose mild onions and chop them pretty small. I also added dried cranberries...yum!

Beat and Bake Orange Cake

I used whole wheat pastry flour when making this cake and it came out great! Nice orange flavor (I used a lot more zest and chopped it very fine.) The icing leaves a lot to be desired. Next time I'll try a cream cheese frosting, possibly a little candied orange peel for decoration. Yum! Even my mother in law, who bakes the worlds greatest cupcakes asked for the recipe!

Pretty tasty, somewhat like sweetened Cream of Wheat. This recipe makes a lot, so make sure to adjust for the right size dessert. I added a touch of vanilla extract to the syrup. Easy and good!

Having never tasted these before, I really have nothing to compare them to. They were easy to prepare, though time consuming. As far as the taste, I don't think that anyone in my family or our guest thought they were that great. They didn't taste bad, per se, they were just unremarkable. I don't think I will make them again.

Mexican Spiced Turkey Tortilla Soup

When I made this soup, I browned some fresh turkey breast with a teaspoon of oil and the spices (I used dried onions). I also cooked the turkey, chilis and stock for about 4 hours before adding the tomatoes and corn. Overall, it was a nice soup, with great flavor, a touch of spice. Make sure to serve with sour cream and/or chopped green onions. For a heartier soup you can add a can of black beans.

Slow-Cooked German Short Ribs

I only gave this recipe three stars because I thought that these ribs, while superbly tender, were bland and boring. The flavor was fine, just very underwhelming. I suggest doubling the liquid and spices in the marinade and adding some punch with garlic or the savory spice of your choice.

Baked Garlic Parmesan Chicken

When I made this recipe, I used bone-in thighs. The flavor was great, but I thought overall it was too heavy and greasy. The olive oil really stands out (and I used 4 cloves of garlic!) so next time I might try a lighter, but still healthy oil, like grapeseed. I will also make it again, but with breasts next time. The drier cut of meat might marry a lot better with the oil. I gave the recipe four stars for the great flavor of the breading/oil combination and the ease of preparation.
