Chicken Chipulos

Reviewed: Oct. 14, 2011
I followed some suggestions by reviewers and made the following tweaks: 1-I added canned, cooked chicken for the sake of time, a small (1/3 or so of a cup) of salsa verde, hot diced chiles and taco seasoning. I think the onions needed to be sauteed or omitted because it did not add to the meal. But other than it was great! will make again.

Bountiful Garden Zucchini Enchiladas

Reviewed: Dec. 7, 2010
I have never given a recipe this low of a rating but I found it to be pretty flat. The cheese sauce was nothing to write home about. Next time I will saute my veggies and just use a bottle of enchilada sauce, it was that unappealing.

Cheryl's Spinach Cheesy Pasta Casserole

Reviewed: Nov. 4, 2010
this is a great easy meal! thanks for sharing! I did make a few changes per other reviewer's suggestions. I used whole wheat pasta (personal preference), 2 full bottles of sauce (24 oz, Spicy tomato Basil-highly suggested-very good), 1-8 oz package of Italian style cheese as my first layer, and about 8 oz of cheddar and mozzarella for the top. I also added mushrooms in with the spinach and about 1 tbsp of minced garlic with some garlic salt (I eyeballed it, maybe a tsp). I baked covered for 35 minutes, then uncovered for another 10. DELISH! On my bi-weekly menu for sure!

Baked Ziti I

Reviewed: Sep. 18, 2010
see i really like this meal. I have made it twice: once with sour cream and once without. I think the sour cream makes the meal, in my opinion. Gives more depth to the flavor. I also added to cayenne pepper and garlic to my ground beef which added some spice. yum! it's on my family's weekly meal list! Thanks for the east and yummy recipe!

very good! I was surprised by the "too salty" comments. I didnt find it to be at all.I used 1.25 lbs of Turkey and omitted the egg. Tasted pretty good! I'll be making them again.

Slow Cooker Chicken Stroganoff

Reviewed: Aug. 15, 2010
this was GREAT! I was a little skeptical as well, with such little ingredients but WOW! I left my chicken breasts whole in the crockpot and accidentally put the cream cheese in first-looked a little curd like but tasted SO good. I used low fat cream cheese and 2 cans of 98% fat free cream of chicken soup to make it more "saucy". I opted out of the butter just keep calories down. Awesome! This totally broke me out of my food rut as well. As a mom of one and one on the way, thanks for the excellent but easy recipe!

Vegetable Soup I

Reviewed: May 17, 2010
changed a few things only because I didnt have other ingredients: substituted beef broth for chicken and a half a 28 oz can of crushed tomatoes in oregano and basil seasoning. i then added zucchini, 1 can of white kidney beans, half a box of whole wheat rotini and omitted the extra spice. I also added garlic salt rather than regular salt. Really good! will make again!

this was pretty bland for my liking. Next time I will add some other spices. Fast though and a nice way to use up extra beef!

Salmon Pasta Pomodoro

Reviewed: Jan. 10, 2010
I wanted to wait a couple of days to see how I really felt about this dish. I regret using canned tomatoes (all I had in the house) because it didn't help it at all. I needed to add easily 2-3 more cloves of garlic to offset the tomatoes. I will try the recipe again, but I'm just not sure about including salmon. Not amazing...not horrible. I'll review again after I make changes.

Sweet 'n' Hot Glazed Salmon

Reviewed: Jan. 6, 2010
This was a really, really good recipe. I didnt have fresh ginger or garlic on hand, so I used jarred. I dont think my reduction was as "glazy" as it should be, but nonetheless, it was really good. My smoke alarm did go off and I had a sleeping baby, so I decided to take it out after 7 minutes of broiling and baking it for another 10. I think next time I will skip the broiling altogether and just bake it for 20-25 min at 400, as a review suggested. If you like things spicy, add a bit more pepper. I also hope to try this with some chipotle chile powder to see if the taste is any difference.

Irish Cream Bundt Cake

Reviewed: Dec. 28, 2009
This is more like a 4.5 star cake! I made this for my birthday party and it was so, so good. I enjoyed it thoroughly. Would be 5 stars but I had issues getting the cake out of the pan. I'm sure it was user error.

i love this recipe. Whenever I am making food for a guest, I whip this out if I am in a hurry. Yum! My husband loves this one. I am a huge garlic fan so I always add 3-4 more cloves than suggested. Thanks for such a yummy recipe!

Chocolate Chocolate Chip Cookies I

I think these were so-so. I followed the recipe exactly except I used half sugar/half splenda, so I am not sure if that created a flat taste. I will try to make these again with full sugar and see.

Roasted Brussels Sprouts

Reviewed: Dec. 28, 2009
I hated, hated, hated brussels sprouts growing up. My dad would boil them-yuck! Finally, after 20 years of rebellion, I decided to give them another try! I am so glad I did. I did make some changes to this recipe-first, I cut the sprouts in half and took off half the leaves to have more darkened, crunchy pieces. I then doused them in salt, olive oil and 3 TBSP of chopped garlic, threw them on a baking pan and roasted for 30 minutes or so, turning them 2-3 times during cooking. Delish!

Honey Limeade

Reviewed: Sep. 6, 2008
I really liked this recipe. Yes, it is tart, but so refreshing. I used key limes and took the advice of another reviewer and used my garlic press to juice the limes. I also strained the juice through my garlic press to be sure of no large seeds. yum!! Thanks for sharing this!

Shrimp and Crab Enchiladas

Reviewed: Feb. 13, 2006
This was a very good recipe. I scaled this down for 6 people. I added a small can diced green chiles inside the tortillas, added more cheese (full block for 6 tortillas),sauteed shrimp in garlic and butter first and added a whole bottle of green enchilada sauce (for 6 people, I was supposed to use 1/2 bottle). Thanks to those who added their suggestions in their reviews-it helped a lot!
