I made this exactly as is, and found that there is just too much butter. 4 ounces of butter is one whole stick. Still, everyone loved it, especially the guys. I will make it again and use fresh mushrooms and yellow onions and definitely reduce the amount of butter. The chuck was nice and tender, melt in your mouth delicious. My local store carries something called "petite tender steaks" which are simply trimmed chuck steaks which makes this recipe a lot easier to prepare. Chuck does have good flavor and the long simmer does the trick.
