Restaurant Style Beef and Broccoli
Delicious and easy. I used a more flavorful cut of meat (1 lb. flat iron, sliced very thinly across the grain). The marinade/sauce is so good I'll double it next time. I added the garlic and ginger to the marinade, which leaves out one step in the stir frying and adds to the flavor. A simple, easy, and flavorful go-to recipe.

Beef Stroganoff III
I made this exactly as is, and found that there is just too much butter. 4 ounces of butter is one whole stick. Still, everyone loved it, especially the guys. I will make it again and use fresh mushrooms and yellow onions and definitely reduce the amount of butter. The chuck was nice and tender, melt in your mouth delicious. My local store carries something called "petite tender steaks" which are simply trimmed chuck steaks which makes this recipe a lot easier to prepare. Chuck does have good flavor and the long simmer does the trick.

Easy Mexican Casserole
Make sure to cook the meat and salsa mixture down enough so it won't be runny. The tortilla chips are supposed to get mushy, kind of like a tamale at the bottom. Don't drain the chili beans for more flavor. Add half a bag of southwest vegetable mix (corn, black beans, peppers) to the meat mixture. Leave out the sour cream layer because it curdles during cooking, and just add sour cream when you serve it. Serve it with Cholula (or your favorite brand) hot sauce! Good for a family dinner or potluck.
