Grilled Onions

Reviewed: May 16, 2014
As written the recipe is just okay but it can really be adjusted to be excellent. I peel and cut the end opposite the root off, scoop some of the center out and then make vertical slices down the onion ( careful not to cut right to the bottom) and I spread the onion open ( like a flower/blooming onion) sprinkle the hole of the onion and inside of the onion sections with a little less than a teaspoon full of beef bouillon granules, a pinch of brown sugar, pepper and small butter chunks. Double wrap in foil and bake in a pan at 375 for almost an hour. Then when I open the foil packets I add some shredded Jarlsberg/mozzarella cheese and a few croutons. It tastes JUST like french onion soup, it is excellent and everyone so far has loved them.

Easy Apple Crisp

Reviewed: Oct. 19, 2012
This has to be the best apple dessert I have ever made! I made some slight changes because of personal taste...I reduced the sugar to 1/2 cup based on prior reviews and that was borderline to sweet for me but hey it is a dessert after-all. I took 1/4 cup of the brown sugar listed and tossed that in with the apples, water, a little vanilla, a little extra cinnamon, nutmeg and then topped it with the cake mix mixed with the remainder 1/4 cup of sugar and cinnamon mixed along with the butter and 3/4 cup of cinnamon ( unsweetened) oats. I had to bake mine quite a bit longer ( 30 extra minutes) until it turned golden brown but it was well worth it! It DOES look soupy when it comes out but thickens upon standing. I have used white, yellow and funfetti ( looked weird tasted great) cake mixes and they were all good. Next up I am going to try Spice Cake Mix.

Apple-Stuffed Acorn Squash

Reviewed: Oct. 3, 2012
It tastes like Apple meets Pumpkin Pie!! Loved this!! I was unsure of this given the mix of ingredients but it is different and delicious! My only change was to use Carnival Squash ( looks like a mini pie pumpkin) that I microwaved for about 8 minutes so that I could slice through it easily and without injury and then followed the rest of the recipe ( I always pierce and microwave winter squash before cutting/slicing). I cannot wait to make this one again.

Rach's Broccoli Casserole

Reviewed: Sep. 2, 2012
I am not a broccoli lover but this wasn't bad. It wasn't what I expected, it was fluffy and eggy ( almost quiche like and I was expecting it to be looser)...I used cream of celery soup and subbed half sour cream for the mayo. It still had a pretty strong mayo taste- even more so when it cooled. If you like the taste of broccoli and mayo this would be great for you.

Zucchini Bread II

Reviewed: Aug. 31, 2012
Not the best, not the worst Zucchini bread recipe. It was on the dry side, it lacked flavor. I chose this one for the brown sugar but I ended up being disappointed. Edited to add: This is a lot better on the second day, it was moister. I added an extra star.

Cinnamon Coffee Cake II

Reviewed: Apr. 9, 2012
Perfect coffee cake! I left off the nuts and used a cake mix that already had the pudding included. I wouldn't change a thing, easy, cheap and delicious!

Taco Dip I

Reviewed: Apr. 9, 2012
Delicious! I used full fat sour cream and cream cheese mixed with the taco seasoning, and topped with seeded chopped tomatoes, lettuce and cheese. It is so good, and I don't even care for mexican flavors! If you unwrap the cream cheese and place in a bowl and microwave for a minute or two, it blends perfectly!

Hello Dollies I

Reviewed: Dec. 27, 2011
I love these bars! It's a Christmas Eve must have! I don't add the sugar to the crust, these are plenty sweet enough on there own. I also use the same measurements but make this recipe in a 13x9 pan lined with Parchment Paper. This recipe is really forgiving, you want more or less of something it still tastes great. I use Walnuts if they are cheaper, and unsweetened coconut ( to cut the sweet even further. I could literally eat an entire pan of these little gems.

Cream Puff Cake

Reviewed: Dec. 27, 2011
I love this and make it often with some changes. I soften the cream cheese in the microwave ( in a bowl) for a minute or so and then I beat it until it's smooth and creamy, then I add the milk a little at a time until it's a thick smooth paste and then I go ahead and add the rest of the milk- no lumps. Before I put the pudding mix on, I paint the cooked and cooled pastry with melted dark chocolate and let that set ( save a little to drizzle on top!). I don't like cool whip in this dessert so I whip 4 cups of heavy cream along with 4 tablespoons of dry pudding mix, 2 teaspoons of powdered sugar and a teaspoon of vanilla until stiff peaks form. This whipped cream is delicious and won't deflate even after a few days in the fridge.

Old Bay® Crab Cakes

Reviewed: Dec. 27, 2011
Never having made a crab cake before, it was hard to choose a recipe. I decided to go with this one as it seemed simple and not mucked up with a laundry list of ingredients. It didn't disappoint. I am not a crab cake lover, I find them all to be "fishy" ( even using premium crab) but I enjoyed it as much as I could. I don't think these were bland at all, they were flavorful without being overpowering. If you want these to taste like spices and vegetables, save your crab and make something else. The only thing I changed was after they were formed, I patted Panko Crumbs onto the cakes. They fried up nice and crispy and I ate mine dipped in butter! ( who doesn't love fried foods dipped into more grease haha)..If I ever make them again, I would use this recipe again. Thanks!

Zucchini Bread IV

Reviewed: Aug. 31, 2011
Yum! I made a loaf of this today and it came out pretty good. The only changes I made were to use one cup of brown sugar and one cup of white, added a 1/2 tsp of nutmeg, ground ginger and cloves, along with the cinnamon...I like my zucchini breads to be "spicy" and I added a streusel topping but that's also personal preference. I ended up making one loaf ( my pan was plenty big enough) and had to cook for ten extra minutes. I didn't find this loaf dry as other reviewers have mentioned but in my experience, it always becomes moister as it sits ( as in overnight). Thanks for the recipe!

Original Nestle® Toll House® Chocolate Chip Pan Cookie

Reviewed: Jun. 24, 2011
I wish I could give this recipe 10 stars- it is perfect!! The recipe is also found on the back of the bag of chocolate chips. I just made them tonight for the third time and they are delicious!! I do cut back on the chocolate chips and add more vanilla ( personal preference). Line your jelly roll pan with parchment paper and they come out and cut like a dream!! I baked them for 20 minutes each time and they are perfectly soft and chewy- I think if you were to cut the time down further they would be to underdone. Thanks for a great recipe!!

Challah I

Reviewed: Apr. 24, 2011
I will start off by saying I am not an expert bread baker by any stretch of the imagination. I made this bread last night and I was a little disappointed. It had a strange flavor to me ( maybe it's the honey? an ingredient I don't really love) and was very dense. This is not light and fluffy at all but heavy and a little on the dry side ( I only let mine go for 23 minutes and they were still dry). I used this for french toast so it wasn't a total loss. However after spending all of that time on something I am not 100% thrilled with, I would choose a different recipe in the future. Thanks!!

Irish Soda Bread I

Reviewed: Apr. 1, 2011
I made this last weekend and it came out wonderfully despite all the things I did wrong! I was out of sour cream so I used vanilla yogurt, added a splash of oil, extra raisins, vanilla and the zest of an orange ( I fear bland food)...It was excellent with butter and would make a great breakfast or with coffee treat! Thanks!!

Buttery Soft Pretzels

Reviewed: Apr. 1, 2011
I made these tonight and they came out good! I followed the advice of the previous reviewers and only added a scant 4 cups of flour ( plus a little on the table to knead with) and still had to add a little extra water. I used brown sugar instead of white and a healthy squirt of corn syrup ( I read that it produces a chewier pretzel). I let it rise for almost 2 hours in a warm oven and I am not sure it doubled in volume but it did increase in size. I didn't feel like rolling out and shaping so I just rolled smallish balls out of it( reduced the temperature and flipped them over when the bottoms were getting really brown)..For the baking soda bath I just kept it in a small pot on a very low flame and added about six pieces at a time, I removed them with a slotted spoon ( shaking off excess water) and baked on parchment paper ( I didn't have any problem with the pooling of water or an off taste as mentioned in another review). Brushed these with an ample amount melted butter when they came out and they taste good and look beautiful. Thanks!

Simple Guacamole

Reviewed: Feb. 10, 2011
This was so good!! I am the only guacamole lover in my house, so I just take one ripe ( but not to mushy) avocado, add two tablespoons of ( a good) salsa, garlic salt and the juice of half a lime to taste. I have tried many a guacamole recipe and this one can't be beat!!

Artichoke & Spinach Dip Restaurant Style

Reviewed: Feb. 6, 2011
Wow! I wish I could give this recipe more stars! It was delicious and better than any I have had anywhere else. I did use 8 oz of cream cheese and a whole jar of Bertolli 4 cheese alfredo sauce but kept everything else the same. I will definitely make this recipe again and again. Thanks!!

Chocolate Candy Bar Cake

Reviewed: Nov. 3, 2010
I made this cake this past weekend for a party and I am sorry to say I didn't like it. I think it was the frosting, it was just to sweet and just had an odd flavor to me. Everyone else seemed to like it ( or were just being kind) so I did rate it four stars. If you don't mind cream cheesy, super sweet frosting ( I even cut the white sugar back 1/4 cup) then you would like this cake. A word to the wise * do not* use Pillsbury brand cake mix with the pudding in the box and add the additional box of pudding to the cake batter. I almost burned my mixer out while mixing it...it was sooo thick and heavy it climbed up my entire mixer ( the cake part still tasted good however).

Peach Cobbler Dump Cake I

Reviewed: Aug. 22, 2010
Easy and tasty!! This is a very good but I agree, it is a sweet dessert and may not be for everyone. I leave the cinnamon out and I add another tablespoon of cut up butter ( and a few shakes of salt on top as I like sweet and salty together). My oven may be off because it took closer to an hour for my top to brown. This is one of my go to quick desserts! Thanks =)
