4H Banana Bread
I loved this recipe, but had a problem...I baked it for 50 min at 325 because I used a glass loaf pan. The top looked gorgeous and cracked just like it said it would. As it cooled, I took a look at the entire top caved in..and underneath you could see it was underbaked and mushy......BUT...the rest was baked perfectly....hmmmm...Did I have it on the wrong oven position? Any ideas?

American Shepherd's Pie
I changed the recipe based on other recommendations, plus because I try to make it healthy, (canned soups are high in sodium)..this is what I changed: I used 2 lbs beef and added 1 clove garlic, and increased onions to 2/3 cup.. I added 1 1/2 tsp. worchestershire , and 1/2 tsp peri peri to meat. I don't use canned soup, so I used "Imagine" organic creamy tomato & basil soup..(about 2 cups for 2 lbs. beef)... I also added some frozen peas to beef mixture I added the soup to the meat / veg mixture in the frying pan and mixed together. We like lots of potatoes, so I used 6 rather huge ones... I also omitted the cheese, as we are lactose interolerant. Yummy!!!!

Light and Fluffy Spinach Quiche
The crowd goes wild!! My first quiche ever, and what a hit! I used other suggestions i.e. Sauted onions and spinach (used frozen spinach, thawed and drained really well). Also added some feta with the chedddar. Did not add any extra egg, and no salt (cheese is salty enough.) I used a frozen deep dish 9" pie crust, so it all fit into the crust. Baked it for 50 min. covered then uncovered about 10 min. until crust nice and golden. They were begging for more!!
