Different Chicken Cordon Bleu

Reviewed: Dec. 9, 2007
This was a very easy recipe and it was a hit with the family. Only modification I made was I used Cream of Chicken Soup with herbs. It gave the dish a little more flavor. Will add this to my dinner rotation!

Baked Pork Chops I

Reviewed: Sep. 24, 2007
This is a great recipe! I did dredge the chops in flour first so the egg and breading would stick a little better. Would recommend that you do that. My chops were between 1 and 1 1/2 inch thick. Cooked according to directions and they came out very tender. My teen son said they are the best pork chops he has ever had! Will use this one again. Thank you for the recipe.

Beefy Baked Ravioli

Reviewed: Dec. 9, 2007
I added a small chopped onion and some garlic to the beef as I was browning it. I also used an entire package of frozen ravioli. I did not cook them just put them in frozen and they came out fully cooked and tender. Because I used an entire package of ravioli I increased the sauce. Very easy receipe and will make again.

Simple Sloppy Joes

Reviewed: Dec. 9, 2007
I do not like store package sloppy joe mix so I gave this a try. It is a hit in my house. I doubled the recipe and let it simmer for 30 mins. Keep it on warm so my family could come and go during the afternoon and eat when they were hungry. The longer this sat on the stove the more flavor it had.

Chicken Tortilla Soup V

Reviewed: Dec. 10, 2007
I did make some ajustments but I am sure if you follow this recipe exactly it will come out good. My adjustements are as follows: I double the entire recipe: I seasoned the chicken with salt, pepper and garlic. I like shredded chicken so I boiled the chicken in chicken stock first and shredded. I countinued on .the receipe as directed and even added a little olive oil to the cooked chicken. Instead of the salsa, I used Hunt's New Fire Roasted Diced with Garlic tomatoes. I think this gave it a great flavor as I am not a huge fan of store bought salsa. Once I had everything in the pot I brought it to a boil and then reduced to simmer for one hour. Came out great!

Three-Cheese Spaghetti Bake

Reviewed: Feb. 28, 2008
The only modification I made to this was to brown some sweet Italian sausage and I double the tomatoe sauce. Only the sausage was browned I added the sauce and simmer it for about 20 mins. I also added a little more cheese. My teenage son had friends over to study for the day I made this. It was a hit with all! Thank you for sharing.

Spinach Tomato Tortellini

Reviewed: Oct. 7, 2008
I followed this recipe exactly for rating purposes. I did, however, brown some Italian sausage to add to the pasta after it was done. I only did this because I was serving this as a main dish and wanted to make it a little more filling. I used fresh spinach and I don't think using frozen spinach would compare to using fresh spinach.

Double-Cheese Eggs Benedict

Reviewed: Nov. 4, 2008
Excellent recipe! I don't like when a recipe gets rated and there are alot of adjustments. However, I did make a couple. First, I had cream in the ridge so I used one cup of milk and the 1/2 cup as cream. Don't think you miss the cream but I wanted to give it a richer taste and I had it on hand. Second, my husband does not like runny egg yolks so I made him scrambled eggs and then followed the recipe. You could get by without the bacon but I think it really finishes off the dish. Will keep this one in my recipe box! Thanks for sharing.

Baked French Toast

Reviewed: Nov. 28, 2008
Made this for brunch and they came out great. I did follow the suggestions of others and reduced the eggs and liquid. I also turned them over once they were in the fridge for a couple of hours. As other suggested I would recommend cutting the bread between 1 1/2 and 2 inches thick. This was a home run with my family!

Bacon Chicken and Dumplings

Reviewed: Jan. 8, 2009
This was a huge hit in my house. Only modification I made was I used six pieces of bacon and only because I wanted to finish off what I had on hand. Other than that I followed the recipe how it is written, including not changing the liquid portion and it came out perfect! Really warmed the belly on a cold Minnesota night. Thanks for sharing.

Creamy Chipotle Chicken

Reviewed: Feb. 3, 2012
To make it more healthy I used, 98% fat free cream of chicken soup, Fat free cream cheese, and Fat Free chicken broth. I softened the cream cheese in the microwave. Combined the garlic, soup, broth, cream cheese, peppers and adobo sauce so it was smooth. Poured the melted butter over the seasoned breast and then added the mixture. This dish had a lot of flavor without all the fat! I did not miss it at all... My cook time was only four hours and the chicken was tender falling apart. Served over rice with sliced avocado slices. Will make again.

Italian Gravy

Reviewed: May 7, 2012
This recipe is great as written. I always have to make some adjustments because of preference. I browned 1 lb of hot italian sausage and added to the pork shoulder and some diced up pancetta. I did not brown the pancetta just added it to the meats. Instead of white wine, which is fine, I used two cups of red wine. Let is simmer all day long. Freezes well and gets better with age!
