Sunshine's Company Potatoes

I was not about to peel 5 lbs of potatoes so I left the skin on them and boiled a little longer so the skins were tender. Still came out great. I also sprinkled about a cup of shredded cheese on top. I added some crumbled bacon on top. The only reason why I did that is I was making bacon cheeseburgers so I fried up the entire batch of bacon. My entire family loved this and it went great with the grilled food and watching football! Will make again.

Spaghetti with Tomato and Sausage Sauce

Whit's Chicken Enchiladas

Great Recipe. The modifications that I made are: I used boneless/skinless chicken breasts and I seasoned them with MCCormick's Garlic Pepper blend and when I boiled the breasts I included a can of chicken broth, the rest was water. This gave the chicken more flavor. Once cooked I shredded the chicken. It was a better texture for the stuffing than cubing the chicken. In addition to the peppers and garlic I cut up two green onions and included them in the sauce pan. I also added a little more cheese on top than the one cup it called for. I covered the dish with foil for the first 30 mins and then baked an additional 5 mins uncovered to brown it a bit on the top. Husband said this was the best dish I have ever cooked! Worth the effort.

Chocolate Chip Banana Bread II

This is a great recipe. I left out the nuts. I used mini-choclate chips and it did not overpower the bread. The bread came out really moist. This was a big hit with my family. Will use this recipe again.

Pasta e Fagioli III

This was a big hit in my house. I have traveled Italy extensively and this recipe tasted like the Pasta e Fagioli I have had while there! I used a nice piece of salt pork instead of the ham and then cut back on the salt and it still came out great. My husband does not like beans but loved this!

Chicken Supreme III

I used a little bit of olive oil when I cooked the chicken & onion. I also used chicken broth instead of water. I followed the recipe and once I had all the stuffing ingredients mixed (to see how much liquid there was compared to stuffing) the mixture was a bit watery, which some people may enjoy. My family likes stuffing so I added a little more stuffing but not too much so it was still moist once baked. My family enjoyed this and I am sure that they will request this again.

BBQ Pork for Sandwiches

I added some chopped onion to the bottom before putting the ribs in. I also salt (lightly) & peppered the onions prior to adding the beef stock. My family loved this recipe! This is a keeper.
