Red Skinned Potato Salad

This is delicious as written but I always have to change based on my own preference. My modificaiton is use green onions or purple onion, add a couple of tablespoons of Dijon mustard and instead of celery I cut up baby dill pickles. Also, I think it is important to make this and blend while the potato and eggs are still warm, then chill it once it is assemble. IMO, all the flavors blend better when warm verse chilled and then mixed.

Sarah's Rice Pilaf

Very easy and tasty. Like that it is an option that is lower is sodium without compromising flavor. If you can't find orzo you can use angel hair, linguini, ect and break into small pieces. I had to do this while out of town because the local store just wasn't as good as mine when it can to great products.

Slow Cooker Beef Pot Roast

I am sure this is a five star as is. However, I did make some modification. I used 2 cups low sodium beef broth and a cup of red wine instead of the chicken broth. I used a a boneless roast. It came out amazing! It takes just a little more effort than some recipes but so worth it.

Guacamole

Great flavor. The only thing I did different, because of my own preference, was juiced a 1/2 of the lime vs the entire thing. I could not wait the hour! Used this as a topping for taco's that I made.

Baked Ham and Cheese Party Sandwiches

Followed the recipe as written other than using King's Hawaiian hamburger buns, which I will use again. Family loved them and my son said that restaurants should serve them...Winner fun receipe!

Italian Gravy

This recipe is great as written. I always have to make some adjustments because of preference. I browned 1 lb of hot italian sausage and added to the pork shoulder and some diced up pancetta. I did not brown the pancetta just added it to the meats. Instead of white wine, which is fine, I used two cups of red wine. Let is simmer all day long. Freezes well and gets better with age!

Buffalo Chicken Dip

I made this dip a couple of times now. First I followed the recipe as written, canned chicken and all. It was good with a lot of flavor so if you are a beginnger then this is an easy tasty recipe. The second time I boiled a couple of boneless skinless chicken breasts, seasoned with salt, pepper and garlic in chicken stock. It took more time but it made a difference in the overall taste. Gave it more of boost and the chicken stood out more. If I have time I will use the chicken breasts vs the canned meat..Thanks for the recipe!

Creamy Chipotle Chicken

To make it more healthy I used, 98% fat free cream of chicken soup, Fat free cream cheese, and Fat Free chicken broth. I softened the cream cheese in the microwave. Combined the garlic, soup, broth, cream cheese, peppers and adobo sauce so it was smooth. Poured the melted butter over the seasoned breast and then added the mixture. This dish had a lot of flavor without all the fat! I did not miss it at all... My cook time was only four hours and the chicken was tender falling apart. Served over rice with sliced avocado slices. Will make again.

Incredibly Cheesy Turkey Meatloaf

This is a five star recipe as is...The modifications I made was grating a medium onion into the mix and adding 2 cups of shredded Italian mix of cheeses...The meatloaf was nice and moist!

What really makes this recipe is the addition of olives and let it sit at room temp for the full 15 mins before consuming...Tough to do because it looks so good but it does make a difference. Thanks for sharing.

Apricot Brown Sugar Ham

Followed the directions and ingredients exactly and the ham came out great! I think wrapping the ham in the foil makes a difference and my ham came out so tender. At the end of the cooking time I poured off some of the juices to make a ham glaze by adding some skim milk and flour. The ham was so good that eveyone said it did not even need the glaze...Thanks for sharing and this will be my go to when I make another ham..

Slow Cooker Vegetable Soup

Fierro Chicken

Really good! I used Fat Free half and half to reduce the fat and it still had great flavor. I used Meundo Mix Chili in place of traditional chili powder. I omitted the mushrooms just because my family do not care for them. I am sure if you follow the recipe exactly as written it will come out great. I just wanted to make a few modification based on my personal preferences.

Beans, Greens and Garlic Soup

I followed the recipe as it directed. It was good and filling without a ton of calories. It would be fine to add chicken to it but for me it was a nice change to not eat meat and still feel satisfied after eating a bowl of it. Nice on a cold night!

Bacon Chicken and Dumplings

This was a huge hit in my house. Only modification I made was I used six pieces of bacon and only because I wanted to finish off what I had on hand. Other than that I followed the recipe how it is written, including not changing the liquid portion and it came out perfect! Really warmed the belly on a cold Minnesota night. Thanks for sharing.

Scalloped Corn

Good side dish using corn instead of opening up a can and heating it up. The recipe did not indicate if you should drain the corn so I went ahead and did NOT drain the corn. Glad I did not because I think the dish would have been too dry. Will make again. Thanks for sharing.
