About this Cook
I grew up in a family that had a Thai mother and Italian father. I feel blessed to have learned from both cultures. I also learned so much from my Italian inlaws. I love to create wonderful dishes that people can remember. I am also lazy lol. So..I use alot of shortcuts. I like quick and easy meals, and also meals that I can take my time making.My house is the house everyone comes to during the holidays! I live in Arizona with my husband and children.
My favorite things to cook
I love to bake and am going to get into bread making here real soon! Every holiday is chaos, but I love it. Cookies, candies,cakes,etc. I love making dishes in my crockpot. Its a lifesaver. But I also love to create sauces. A good sauce, can make a mediocre dish taste outstanding!
My favorite family cooking traditions
I still follow the traditions of every Holiday that my family did. We NEVER had a bakery birthday cake. I grew up where cakes were made for the birthday person by someone they loved. I still bake all my cakes, encourage my teenage daughter to as well and refuse to buy Birthday cake.
My cooking triumphs
One of my cooking triumphs was when my husband couldnt tell the difference between his mothers meatloaf and mine! Another is to finally duplicate a cake recipe that my mother made years ago and I couldnt get it before she passed on. Thanksgiving dinner is always wonderful here. Thank goodness I can put out a decent spread of food.
My cooking tragedies
my tragedies always seem to happen at the worst momments like at Holidays when people gather. I have had many. But you learn and move on. My worst dish was a steamed Chilean Sea Bass (not from this site) WOW did I screw that up.

Holiday Brie en Croute
Very good. I make it every year. Except I get my puff pastry at Trader Joes. It's an all butter pastry and already to go in the squares. Alot cheaper too. I don't bother to re hydrate the cranberries. I just toss them in. I use apricot jam instead of raspberry. Be sure to let it cool for about 45 minutes before cutting. Seems long but if you cut it to soon all the cheese and filling just flows out.

Monkey Bread with a Twist
Yummy,easy,fun to make with the kiddos. I used 1/2 cup of sugar and a little over 2 tsp of cinnamon. Which was plenty to coat the biscuits. No need to use a whole cup. This was there was no waste. I only had 2 apples on hand and that was fine. I also took a tip from other reviewers and covered it with foil while baking. We made these Christmas morning! And my house smells wonderful. Thanks for a great recipe.

Merenges
First time making meringues for me! It has been a warm December week here in Phoenix. Mid 70's. Maybe that is why after getting one batch on the cookie sheet, I had to re beat the egg whites to make them stiff again. If you decide to pipe them, put a little of the meringue in the bag at a time, if you add to much, the warmth from your hands can deflate the meringue. I accidentally used a big star flower tip and the lemon zest clogged it. producing not so pretty cookies. Use a large open star tip instead. I followed the recipe except swapped 1/3 c of the sugar for Splenda to see if it could be used successfully. These came out wonderful. Love the citrus flavor! I want to experiment with different flavors. The texture is very light and reminds me of a toasted marshmallow.
