Pesto Pasta with Chicken

Instead of using 'additional' olive oil, I used the olive oil marinating the sun-dried tomatoes to cooked the chicken in. It had all sorts of spices, including garlic and oregano...yummy! Also tossed in some thinly sliced red onion in the end, which was a great addition to the flavour!

Chicken Avocado Pizza

I really enjoyed this recipe. It was super easy to make, and delicious. I made my own dough, so I made sure to undercook the chicken slightly. Nice and moist in the end! wonderful. I added some italian allspice and shrimp to the mix.... great combo! As for the sauce--I added some garlic powder, paprika and pepper in addition to the lemon juice. I used mozzarella, as I didn't have any monteray, and found it to be a great mix--the mild cheese, allowed the spicy guacomole and cherry tomatoes to really stand out....

Banana Crumb Muffins

Made little banana bread loafs, and found them to be nice and moist in the center--using a microwave range oven (I think that's what its called!). Had to bake a little longer than suggested. While the loafs were still warm, I wrapped them in saran wrap, and it kept them spongie and moist!Hit at the office

Day Before Mashed Potatoes

DELICIOUS. Made these the night before a big dinner as I had too many appetizers to bake. I found they did dry out a little, but I placed some waxed paper right on top of the mix, than covered bowl with saran wrap. I think this helped keep the mix more moist--in fear of dry potatoes, I over compensated and added far too much milk the day after, and turned the potatoes into a 'puree'--delicious none the less...will make them the same day next time

Queijadas

This recipe is perfect. these are just as I remember them--well, perhaps more of a custard than I remember, but amazing tasting. I tried using 'cardboard' muffin cups(waterproof ones- cheap and easy to find in Japan. Not sure elsewhere). they were perfect, as I was able to rip the queijadas right out after cooling. Also recommend adding lemon rind--be generous! Will reduce the sugar next time, as I nearly killed my japanese dinner guests!
