Tomato-Cream Sauce for Pasta

Very good! A winner in my book. I substituted fat-free half and half for the cream,cut the butter a little and doubled the garlic. I also used my hand blender and smoothed it a little, so that it wasn't super chunky but still had texture. Hubby loved it. Served it over organic spinach fetuccini with spicy italian sausage sliced on top. Beautiful meal!

Becky's Chicken Salad

Perfect! My father-in-law loves this, says it is just like his mom made. I add a bit of lemon juice and lately have been substituting sour cream for the whipping cream and I think it is just as good. BTW: if you half it, it is perfect for one can of chicken.

Oven-Fried Catfish

I have made this - oh probably 10 times in less than three months now. My husband absolutely loves it. We are from the south and know good catfish. I love having an easy recipe I can do in the oven. I make this almost weekly now. I do have to turn on the broiler for 5 minutes or so at the end to get it truly crispy. The mix makes enough for 3 large filets every time I make it.

Royal Icing I

Perfect icing for my gingerbread men. Like other reviewers said, it made a TON of icing. I decorated probably 50 gingerbread men and didn't even put a dent in the icing. Easily 1/3 it or 1/4 it. I also used a pasturized egg white product from the refrigerator section near the eggs, so I wouldn't worry about the kids. It worked quite well. It may have been more runny because of this - next time I will make it thicker. Hardened up perfectly though!

Scrumptious Salisbury Steak in Mushroom Gravy

Just what I was wanting. I did more crackers than called for to make the meat stay together better, and ommitted the poultry seasoning b/c I didn't have any. I also used just one can of mushrooms and pureed them to get the flavor w/o the texture (I'm not a big mushroom fan). I also cut the milk some. It was great and made lots of gravy. We were all impressed with how tender they were.

Swedish Meatballs II

I was a bit worried about the sauce after reading the reviews, but I wanted to make authentic Swedish Meatballs with a sauce from scratch. Well, this was perfect in my opinion. The only thing I would have changed is I would have liked a bit more sauce.

Pear Walnut Chicken

We thought this was good, but a little on the bland side. The sauce could use some kind of additional flavor, though I'm not quite sure what. Next time I will marinate the chicken with a bit of the soy sauce for flavor and then saute it until cooked, to make it more tender. I think simmering it makes for tough meat. I will add to the thickened sauce at the end.

Delicious Ham and Potato Soup

Really good. I did make a few changes: 1) I did one stalk of celery cut into 3 big chunks, and some big chunks of onion to reduce chopping, then I removed them after boiling so we got the flavor but no chopped veggies in it. 2) I doubled them ham, and still thought it could have used more. 3) I did a bit more potato (2 medium potatoes was bout 4 c I think.) 4) I only had bullion cubes, so I did 5 (equiv to 5 t granules) and omitted the salt b/c of the extra ham. 5) Reduced pepper to 3/4 t I served it in bread bowls with cheese sprinkled on top. Wonderful, however this would serve 4 adults MAX. Never ever 8 servings!

Sugar Cookie Frosting

Really good. I subbed butter for the shortening as others did, because I didn't think it would taste good. I started with 3 T milk so it wouldn't be too thin. I was making red icing so I knew it would thin a lot with the food coloring. The red was perfect, I think the the pink was a bit too thick. It dried up nice and hard in a few hours. Great taste. I decorated 45 heart cookies and only used about half the icing (I didn't cover all the cookies, though - about 2/3 I just did detail icing on) It was wet enough for sprinkles to stick very well. Great icing!!

Vicki's Hush Puppies

These were as good as any hush puppies I've had, and I loved hush puppies - I have had all kinds. A few changes: we only did 1/4 c sugar, added salt and pepper, and added 1/4 c buttermilk. Substitute green onions if that's how you like your hush puppies.

Will's Spicy New Orleans Catfish Fries

We used corn meal rather than corn flour, and added some salt. Everyone loved this catfish and it was wonderfully crispy. The best cornmeal catfish we've had.

Six-Layer Coconut Cake

I wish I had found this recipe when I was looking for a coconut cake recipe, but I had already made "Coconut Cake III". (It turned out great though) But I wanted a scratch recipe. I did use the icing because this is the type of icing my father in law wanted for his birthday cake. I had a hard time with it and it took me 45 minutes. On low it took way too long to heat up, and I ended up putting it on medium. It never formed stiff peaks in the bowl, but I added more cream of tarter after 10 minutes and beat it 5 more. It still turned out great - tasted wonderful and paired perfectly with the cake. I think I got a bit of yolk in it, so maybe that messed it up. I will try it again - next year :-)

Pumpkin Bread IV

Wonderful! Loved having 3 loaves. We ate two and froze one. I use one fairly large pie pumpkin and it was perfect. Following other reviewers' suggestions I did the following: substituted applesauce for 1/2 the oil, substituted brown sugar for half the white, upped the cinnamon to 2 t and cut the cloves to 1 t.

Awesome Honey Pecan Pork Chops

Fantabulous! I added 1/2 C chicken broth and 1T soy sauce per other reviews, and then some flour at the end to thicken the sauce. Use very thin bone-in pork chops! 5 stars from husband too. Serve with sweet potatoes and green beans... yum just writing this makes me hungry!

Crispy Orange Beef

Excellent. I sprinkled the beef with meat tenderizer before drying and omitted the salt. I also used just enough oil to brown one side at a time. My husband and I both loved it - we will be adding it to our regular meal list!

Serbian Ground Beef, Veggie, and Potato Bake

Average - tastes like "beef and potato casserole" I did three potatoes instead of three and layered them with a layer of potatoes in-between the beef and thought the ratio was perfect.

Bread Machine Bagels

Really good. I did 1c of whole wheat flour and 2 c bread flour, and they were still really yummy. I may try more WWF next time. I let them rise 30 minutes and boiled them longer per other reviews. So easy - and the kids loved them too. I will probably try making bagel chips with them too sometime.

Cake Mixes from Scratch and Variations

I thought this was very good! For simplicity I used oil, especially since others said that was good. I didn't make any other changes. I was making cupcakes, and filled them 1/2 to 2/3 full, baked 15-20 minutes and they were perfect. I frosted them with "butter cream frosting II". Yummy!! So mutch better than a mix.
