Eggplant Parmesan II

This was pretty good while it was very hot, but I found that as it cooled it took on an upleasant flavor. We are not eggplant lovers, though, so if you love eggplant this is probably a winner for you.

Plum and Ginger Chicken

It was too gingery for me, and I cut the ginger a bit too. Not a bad meal, but we didn't love it. We prefer Oyster Sauce Chicken, which is similar.

Egg Salad III

I made this without the olives, because I didn't have any and added pickle relish and mustard instead. I thought it needed salt... I think with the olives this would be just perfect and can't wait to try it again!

We didn't like this at all. I think it was probably the cheese, though, so I gave it 3 stars, because if you like Asiago you'll probably love it.

Lemon Square Bars

Perfect! I had trouble with the edges sticking, but was afraid to use foil because the crust would get too done. I think next time I will make the crust go up the edges a little bit to fix the problem. A keeper!

Artichoke and Sun-Dried Tomato Chicken

Excellent! I did plain artichokes and couldn't find sun dried tomato pesto, so I just added sun dried tomatoes to my pesto. I was worried it wouldn't be too flavorful, so I added some white wine. It was excellent and would be without the wine! Nice and healthy, too. Will definitely make again.

Amy's Garlic Egg Chicken

Great! Fast and easy too! There was way too much breading leftover, so I would cut it in half. I also did 1/3 of the butter, and next time will probably only "Pam" it to be healthier. Great recipe!

Swedish Meatballs II

I was a bit worried about the sauce after reading the reviews, but I wanted to make authentic Swedish Meatballs with a sauce from scratch. Well, this was perfect in my opinion. The only thing I would have changed is I would have liked a bit more sauce.

These were decent, but maybe because they were microwaved we didn't love them. I would make them again, but my husband vetoed. Not a bad recipe though for a quick side dish!

Chinese Fried Noodles

Great recipe for easy fried noodles! I love having an alternative to rice for our Asian meals. Not too hard or time consuming and definitely yummy! Update: we decided we really dont like the sesame oil flavor so I omit it. Sometimes I make fried rice with this recipe, substituting 2 c cooked rice for 1 pkg ramen. (Save the leftover seasoning packet).

Tuna Salsa Wraps

Not bad, but not great either. At first, I thought "These are really pretty good", but the more I ate the more it just tasted like tuna in a can. I would use sour cream instead of mayyonaise I think. If you love tuna, you may love these, but I am not a tuna "lover".

Awesome Honey Pecan Pork Chops

Fantabulous! I added 1/2 C chicken broth and 1T soy sauce per other reviews, and then some flour at the end to thicken the sauce. Use very thin bone-in pork chops! 5 stars from husband too. Serve with sweet potatoes and green beans... yum just writing this makes me hungry!

Awesome Carrot Cake with Cream Cheese Frosting

Awesome indeed! Per other reviews, I did 1/2 c oil and 1/2 c applesauce, and only 1 c sugar, and 2 t cinnamon. It was for my son's birthday, so I omitted the nuts too, but would definitely do them next time... It was so very moist and wonderful, everyone wanted the recipe! It is a winner and will be a staple around here.

Mom's Zucchini Bread

Very very good - I made carrot bread with it, but I will be using this recipe from now on instead of mine. I have made it twice and the second time I did less oil and added some milk for moisture. In my glass loaf pan I had to bake it much longer - about 20 minutes.

Oyster Sauce Chicken

Excellent! When I made the sauce I thought "This is going to be terrible". But when it came out of the oven it was oh-so-good! I added some sugar to mine and my bottle of oyster sauce was a 9 oz bottle. Husband loved it too - I froze the left over sauce and we will make again!

Very good! Thoroughly enjoyed it - I did about half and half sesame and vegetable oil. (I think all sesame would be too much for us). I even accidentally forgot the green onions and it was still good! Can't wait to do it again with the onions. I marinated overnight.
