Cranberry Bars

Very good and very easy! I do think you could use canned cranberries to save time. I also might try to use a can of canned blueberry pie filling, too. Yum!

Ham and Asparagus Fettuccine

I tried to cut some fat and calories by using half and half, but had trouble with the consistency of the sauce. That was probably because I did not use fresh grated cheese, so I suppose it was my fault. I microwaved a ham steak and cubed it, that worked great. I also used a box of frozen asparagus as the fresh stuff is pretty expensive this time of year. Great recipe, I will try it again!

Awesome Roast Beef

This was great! I added potatoes, carrots, and onions. They were so tender. I also added a couple cubes of beef bouillon. For the last 30 minutes, I took off the cover and added a little flour/water mixture to thicken the gravy. It worked perfectly. Great recipe!

Super-Delicious Zuppa Toscana

Excellent! I've used other zuppa toscana recipes, but this is my favorite. Using kale is a must, in my opinion. I completely forgot to add the red pepper flakes, it still tastes great. The only problem I run across with this soup is the potatoes falling apart. I may try slicing them a little thicker next time.

Strawberry Refrigerator Cake

I've made this twice now and both times have been very frustrated trying to frost the cake. There seemed to be too much strawberry puree, so it swirled in with the frosting and got pretty ugly looking. I may try this with a white cake and raspberries next.

Sausage Egg Casserole

This is my new favorite egg bake recipe, no messing with bread! I loved it, so good and so easy! The first time I made it, I had some lumps of doughy flour mixture throughout. The second time I made this, I used a pastry blender to mix the flour/butter to make sure there were no big chunks. Much better! I highly recommend trying this recipe!!!

Monterey Chicken with Potatoes

This could be a great recipe with a few adjustments. The butter needs to be cut waaaaay back. At the end, the dish was swimming in butter (and I had used approximately 1/3 cup only, not the 1/2 as in the recipe). The potatoes need to cook alone a little longer, maybe 15 minutes. I'll add more lime juice next time. I will make this again with these changes.

Congo Bars I

I was in the mood for cookies, but didn't have enough time or energy to make them. This recipe was perfect! So easy and the bars are great. I used a 9x13 pan and I highly recommend underbaking just slightly so they stay soft and chewy. I didn't have nuts and didn't miss them. I used a combo of chocolate chips, butterscotch chips, and white chocolate chips because I was trying to use up leftover bags. I will definitely make again!!!

Suki's Spinach and Feta Pasta

Good recipe, but I prefer Greek Penne and Chicken from this site (with the modifications in my review). This recipe just seemed to be lacking something for me. It was very easy, though, so with a little doctoring it could be great.
