Curried Mustard Greens with Kidney Beans

really really yummy! DO NOT BOIL THE GREENS! it makes them loose a lot of their nutrients. And keep the stems! they will soften but actually have more nutrients than leaves. I mixed it all (except the greens) together after cooking shallots and then placed the layer of chopped greens over the top and slowly worked it in as it wilted, which didn't take long. I would also choose a different bean - something softer. Made the following subs for doubled recipe: >coconut milk for half and half >one can of diced tomatoes and one sauce (rather than 2 sauce) >ginger powder for fresh (couldn't find in store) I put it over rice but that reduced the nice strong flavors... I would prefer adding some veg stock and having it as a stew. Was surprisingly easy and so good!!

Mashed Kohlrabi and Red Potato Bake

I STEAMED the potatoes (skins on = more nutrients) and kohlrabi ( the latter being in much smaller pieces so that it cooked faster reading that it takes longer) because steaming helps RETAIN MORE NUTRIENTS than boiling. I also FINELY CHOPPED THE KOHLRABI LEAVES (stems removed) because they have significantly MORE NUTRIENTS than the bulb itself. After cooking the potatoes and kohlrabi I added the leaves with the potatoes and kohlrabi pieces to the blender (easier than mashing or food processor - I have an unusual blender…). Blended it all together with a tablespoon of MELT, put it in agreased little crock dish, covered with a little layer of fresh chopped parsley and then spread over that a layer of shredded pepper jack (just what I had on hand but could easily be a multitude of cheese options, or something vegan - will ponder that..) and baked for a bit till the cheese had a brown light crisp - about 425 for 15 mins. Added a little salt to taste in my bowl and was AMAZING!! It was the first time I've even done anything with kohlrabi so it was a great experience. I plan on tweaking this to be vegan to take to Thanksgiving for me and my uncle and his gf. :) STEAM!!! ADD CHOPPED LEAVES!!!

Blueberry and Chia Quinoa

I made substituions of sweetened vanilla coconut milk instead of soy, added vanilla, and used mixed berries (black, blue, rasp, and straw). It was incredibly lacking in taste and sweetness. I added stevia to my bowl and that helped. I think the ratio of quinoa and chia to flavorings is off. I'd use either a far less amount of the seeds or a much much greater amount of berries, honey, and whatever to give this a little more punch. As for my house smelling like heaven, well, I couldn't smell anything until I got near the crockpot and it smelled very earthy - not like warm vanilla and berrie porridge. Again, a ratio thing, probably. has potential, but certainly not as as posted here.

Potato and Jalapeno Gratin

I made this twice. First, I made it for 90-people community dinner. I used cheddar and Anaheim chilies. It was a huge hit! A lot requested servings to take home and many came up to me to compliment it. The second time I made it at home for myself. Was not a fan of the combo of gruyere and jalepeños at all! The Anaheims had better flavor and better paired up with cheddar. I realize the difference in cheese and addition of peppers sets this apart from traditional, but having made it 2 times so close together (2days apart), I feel confident with my conclusion. I love the ingredients and thought this was going to be fabulous; unfortunately, as presented here, I was disappointed. We all have different tastes and this wasn't horrible. I mean no offense to the original poster if the recipe.

Vegan Mac and No Cheese

I added diced zucchini, whole mustard seeds (about 1 tsp), a dash of cayenne, and made a roux with vegan "butter", rice milk and rice flour that i added to the cashew mix and added about 6 oz of roasted red pepper (half of the 12 oz. jar I bought - was the only option the health food store had) - all organic. Oh, and doubled the yeast. My son was skeptical (picky and non-vegan and 16) and ate it and said it was pretty good. i would add more veggies (mushrooms, zucchini, maybe diced tomatoes, parsley, cilantro, even kale or whatever) and maybe skip the roux everyone seems to think is so fabulous. It's NOT mac n CHEESE - it's its own thang and while the roux didn't ruin it, it didn't really seem to add much and was a wasted time/step. I'd maybe do something crumbly on top, too - vegan-buttered crumbled rice crackers? will def make again and play around with this one!

Delicious Ham and Potato Soup

Modifications I made: no celery, just ~1tbsp celery seeds. Added abt 2 cups shredded extra sharp cheddar cheese slowly, whisking constantly, to butter/flour/milk mixture AFTER whisking it after adding milk for abt 3 mins. Also added abt 1.5 tbsps smoked paprika and 1/2 tbsp cayenne to potato stuff when I added salt and pepper. LOVELY!

Quinoa and Black Beans

this was most excellent! I added a can of Rotel HOT and one chopped up jalepeno and some shredded cheddar (I'm Vegan, so I used the kind made from almond milk). I had company try it and it got rave reviews!Recipe as is, I give it a 4 but with my additions I give it a 5!

Dilled Sole with Almonds

Baingan Bharta (Eggplant Curry)

this was super yummy! And fun to make! I added a squirt of lemon juice at the end as someone suggested - not sure that that really added anything - I think it's just fine without that. I used fresh garlic (two really big cloves) and ginger (about 2 tbsp) and 2 jalepeno peppers (I like it spicey) and it was just right! I'm making this again this weekend for vegan sis and friend visiting :O)

made this last night for my pumpkin-carving party and it got RAVE reviews! I will DEFINITELY make it again, as the recipes states (the only thing I substituted was celery salt for the chopped celery, which seemed to work just fine!). Even the kids loved !
