Broccoli Cheese Soup

Reviewed: Feb. 7, 2008
I used half the butter specified, but other than that followed along as the recipe instructed. The soup was good, but it seemed to be too cheesy for us. Next time I will use only half the cheese and see how it turns out. But it was still a very good soup. Also, I made this in my slow cooker, and it was so easy, I would make it that way again.

Oatmeal Peanut Butter Cookies

Reviewed: Jan. 22, 2008
I'll admit, I was skeptical since I totally hate peanut butter cookies, but my husband and kids love them, so I decided to go ahead and give this recipe a try. The caption above the recipe claimed to have made her husband a fan, so I wondered if I would be one too afterwards. Well, she was right, this recipe is delicious, and I am most definitely a fan, and will be making AND EATING this totally delicious cookie again and again (much to the dismay of my bathroom scale). The only change I made to the recipe was to decrease the salt to 3/4 tsp. and I added 6 oz. semi-sweet chocolate chips as per several other reviews. Other than that, I followed the rest of the recipe right along, and had fantastic results. Although after eating a few of these yummy cookies, I think I could have used the entire 1 tsp. of salt with no problem. These cookies are so good, everyone one of us are still raving about them! Thankyou so much!

Camp Cornbread

Reviewed: Nov. 11, 2007
We thought this was very good, although I also decreased the sugar by half. My kids loved them, and they were gobbled up by everyone, so there were no leftovers to worry about! Thankyou!

Creamy Tomato Soup

Reviewed: Nov. 11, 2007
Absolutely Fantastic Soup! Delicious homemade taste with hardly any effort, and so yummy! It was a huge hit with all of of us, and there were second helpings had by everyone. I followed the recipe exactly, and made no changes, it was so creamy and delicious and so easy too. The only thing I might change the next time I make this is to puree the canned diced tomatoes in the blender before adding them since I have one daughter that loves tomato soup, but hates tomato chunks (she ate all of her soup, she just left the pieces of diced tomato in the bottom of her bowl). I will be adding this recipe to my "keepsake" file for sure, and will be making it again, and again, to rave reviews! Thankyou!

Baked Tortilla Chips

Reviewed: Oct. 14, 2007
Delicious! I only used the lime juice, oil and salt though, and for us, that was all they needed! So tasty and easy to make, a new favorite with all of my children too! Thanks!

Sensational Steak Sandwich

Reviewed: Oct. 14, 2007
I omitted the green peppers since I didn't have any, I used extra beef broth instead of the wine, and instead of spreading the horseradish on the bread, I added 2 TBSP. of it to the crock pot with the cooking liquid. I didn't use the mustard on the sandwich bread, and I made up individual sandwiches in hoagie buns, then heated them in the oven to melt the cheese, and it was a huge success! This is delicious, and a bit like a cross between a cheese steak sandwich and a french dip. I also used a lot of extra mushrooms since my husband and I love them, and this is one recipe I will be making over and over again! The leftover liquid from cooking used for dipping is so tasty, we loved it! Thanks!

Easy Broccoli Quiche

Reviewed: Oct. 14, 2007
After reading the reviews I made this using 5 eggs, cut the milk down to 1 1/4 cups, and increased the broccoli to 2 1/2 cups. I also used colby jack cheese since I was out of mozzarella, and pre-baked the crust before adding the quiche filling, for about 10-15 minutes in a 350 F oven. But it baked up beautifully in 50 minutes, and was perfectly set and tasty. All of my children gobbled it up, and my pickiest eater even went back for thirds! A real yummy hit, so delicious, and one I will be making over and over again! Thanks!

Banana Nut Bread

Reviewed: Sep. 14, 2007
I followed the recipe exactly, except I used a Butter Pecan cake mix since I didn't have a yellow one. It was incredible!!! I didn't have a great banana bread recipes before this, but I do now! This had a yummy quick bread texture, I would never know this started with a cake mix, it really tastes like I slaved over it. And my house smelled like heaven as it baked. This recipe is a total winner! Thankyou so much, I will be making this one for years to some!

Uncooked Banana Pudding

Reviewed: Apr. 23, 2007
Everyone loved this! I made mine in an 11x8 glass dish since I don't have a trifle bowl. I did my layers as: cookies, pudding, bananas, cookies, pudding, bananas, pudding, then crushed the remaining cookies and sprinkled them on top. Covered it, and chilled it overnight and served it the next night for dessert, and it was inhaled! Seriously easy and so delicious, I will be making this again happily as well as at the insistent request of my family! Thankyou!

Pineapple Lemon Cake

Reviewed: Mar. 25, 2007
I originally gave this 3 stars, but I came back and upped it to 4 after tasting it again after it chilled overnight in the fridge. This is a lot tastier the second day. It really needed some time to let the flavors blend and mellow, otherwise, I only tasted a lot of lemon from the cake, and it overpowered everything else. By day two it was really smooth, light and refreshing, and something I think I will make again, but now I know to let it chill overnight before serving. Oh, and I used 12 oz. Cool Whip and it was almost too much, so I don't know why it calls for 16 oz. in the recipe, it would be spilling over the sides otherwise.

Cousin David's Slow Cooker Brisket

Reviewed: Mar. 25, 2007
The meat came out perfect, and was VERY tasty! I personally didn't care for the gravy, but my husband and kids thought it was great. I will make this again, especially since it was so easy and the meat came out tender and perfectly moist. I think the leftover meat will make a delicious fajita filling too! Thanks!

Pumpkin Bread

Reviewed: Mar. 24, 2007
Delicious! I used 1 1/2 TBSP. pumpkin pie spice instead, and I also added chopped walnuts and some fresh frozen cranberries, and we all loved it! Although this bread could have stood all on it's own, a real winner of a recipe. Simply delicious, and so good when eaten warm, and also delicious the next day, although good luck on them lasting that long! I made mine into 6 mini loaves, and they were so good!

Sunday Best Fruit Salad

Reviewed: Mar. 24, 2007
So delicious!!! Absolutely my new favorite fruit salad! Perfect amount of sweet, with the great taste of the fruit coming through in every yummy bite. My kids went back for seconds and thirds, we all devoured it! But it makes more than 8 servings, which is fine with me, more to enjoy tomorrow! Thankyou for such a scrumptious recipe!

Neat Sloppy Joes

Reviewed: Mar. 24, 2007
Loved it! So delicious! After I cooked the beef, onions and celery, I threw them it my crock pot with the rest of the ingredients, and cooked it on "High" for 2 hours so I could work on some other stuff I needed to get done. It turned out a little bit saucier, not quite as neat, but I think if I had cooked it in the saucepan it would have cooked some of the liquid off. So no complaints, and this is my new standard sloppy joe recipe, both in a saucepan or crock pot, so good!

Chocolate Chip Cake Mix Cookies

Reviewed: Mar. 17, 2007
We LOVED these! So yummy! I omitted the raisins, reduced the oil to 1/3 cup, and added a few dashes of almond extract and vanilla, just for an enhancement even though you can't really taste it, but it gives it a little "something extra". Fast, Easy and Delicous! The perfect combination!

Meaty Tomato Soup

Reviewed: Mar. 17, 2007
I made this on the stove top since I was short on time. I did everything as stated in the recipe except I used 2 cups of pasta. I cooked it on medium high, brought it to a boil, added the pasta, cooked it for about 15 minutes until the pasta was done. It was not a soup by then, more of a pasta dish w/ a red sauce, which we ate with parmesan cheese sprinkled on top. We all liked it, excpet we all agreed it was a bit salty. I would suggest cutting back on the salt, and adding more if needed after a few taste tests. I WILL be making this again, on the stove top and also in my Crock Pot. Great with a green salad and crusty french bread! Thankyou

French Peach Pie

Reviewed: Mar. 11, 2007
Very Yummy! I used the Del Monte Raspberry flavored peach slices cut into small pieces for easy cutting and serving, and it was delicious! I also mixed the peaches and slightly cooled glaze together, and then topped the pie with it, very easy! Perfect for a summer pie too, and perfect light tasting pudding/custard flavor. Not too sweet, hit the spot, and I will be making this again for sure!!! Thankyou!

Potato Minestrone

Reviewed: Mar. 10, 2007
I made this with diced canned tomatoes w/ sweet onion since I was out of dried minced onion, otherwise the only other changes was to make 1 1/2 times the recipe, except I only used 10 oz. of the spinach and it was plenty. Also, as per other reviews, I made this in the crock pot a day ahead. Stuck it in the fridge, and re-heated for dinner the next day and the flavors had blended beautifully without any overpowering spinach flavor. The soup was delicious, my kids ate it all up. The only thing I would change is I did not care for the mealy texture of the garbanzo beans in the soup, but I still loved every bite. Just might omit them next time. But it didn't ruin the yummy soup by any means. Also sprinkled a little parmesan cheese over each serving of soup. Yum!
