Best Cream Of Broccoli Soup

Awesome thanks! We grow a lot of our own veg and even when I'm careful about blanching & freezing - broc & cauli never are as good as fresh. Now... I'm going to make this soup with them instead! My tweaks - used 1/2 broc 1/2 cauli - butter instead of marg - 1/4 cup diced cheddar per cup of milk - and I used 1/2 cream 1/2 milk. I used my old wand blender thingy to zap it down to a coarse chop before adding cheese sauce. Yumma!

Caramel Sauce

We used to make this on our hippy trip in the 70's!! We boiled it in the tin for an hour then scooped it into a graham wafer crust then covered the top with sliced bananas - yum! Thanks for the blast from the past!

Tomato Zucchini Casserole

This is deee-lish and will become a regular late summer dish in my home. I also used fresh basil and a bit more garlic. I'm sure it would be good with just about any kind of cheese too. I didn't have any trouble with it being too watery because I don't grow regular zucchini anymore, since I discovered "romanesco" zucchini. It's much drier and the texture holds up beautifully. Pattypan squash would work too.

Ham, Potato and Broccoli Casserole

This one's a keeper for me! My changes were to use, in layer order: 2 cups diced leftover baked potatoes 1/2 leftover roasted onion chopped (if I didn't have that I'd try 1/4 fine diced raw onion) 3/4 cup fresh broc cut into small florettes 3/4 cup frozen corn same amount of ham for sauce I used 1/2 cup parm and 1/2 cup diced cheddar which stayed on top and made a nice cheesy topping, plus 1/2 tsp garlic powder and a good grind of pepper Next time I'll only use 1/2 cup milk as the sauce was a bit soupy. Yum! Having the leftovers for lunch right now! :)

Baklava

Wow! I was already making a Greek feast for my friends and thought - gee, wouldn't some baklava be a perfect finish? But I'd heard it was hard so I logged on to my trusty allrecipes to check - NOT! A little fiddley but not hard. And my phyllo pastry had been in the freezer for too long so it was very fragile. So my assembly involved layering many broken pieces - but you'd never know looking at the finished product. Oh and I made it by the original receipe and wouldn't change a thing. It was a big hit! There's not much left but I think I'll have a piece for breaky :)
